Looked dark gold in the glass and had a creamy, white head. The aroma exhibited spicy scents like cinnamon, coriander, and white pepper. The flavor came across peppery with hints of grapefruit and warm orange juice; nice alcohol warmth. Medium bodied; smooth yet tingly and with a dry finish.

Very good saison with a wild mixture of flavors and scents that all seem to come together and work out well. The brewers did an excellent job of keeping the relatively high ABV in check with this crazy mixture of flavors and scents.

Bottle pour at the post-FWIBF bottle share held at the Adelaide Inn in Paso Robles, CA.

Bottle # 12.25.13.

Pours a murky light reddish-brown with a foamy khaki head that settles to a partial film on top of the beer. Small dots of lace slowly drip into the remaining beer on the drink down. Smell is slightly sour with malt, spice, and cherry aromas. Taste is much the same with slightly sour malt, spice, and fruit flavors on the finish. There is a mild amount of spice bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a pretty good beer with an interesting combination of spice and fruit qualities.

this is a mighty tasty brew, full of beautiful saison yeast and sweet cherry flavors, but it has no business being 13% abv, it just doesnt add anything, and can really sneak up on you in a dangerous way in a beer this drinkable. the color is tinted pink, hazy, and heady in white. the nose is subtle cherries, more of the heavy handed grain bill here, maybe some oats, and lots of body as a result, but carbonation is also robust, and this drinks refreshing. the cherry flavor is also subtle, but persistent all the way through. it starts on the slightly tart end in combination with the funky yeast, but turns to more of a sweeter ripe fresh cherry in the finish. its nowhere near as heavily fruited as i expected it to be, and i would have liked to see trinity use the same restraint on the alcohol, which makes this a rough bottle to polish off. well made beer though, expensive, but well done. recommended to the saison freaks out there.

I wanted to like this beer, but my bottle was woefully undercarbed. I dont know if it was a production issue or what, but it basically poured flat. Very disappointing at $17/btl.

Taste was a little bit of a cluster too. Cherries mixed with some funk....although I'm hesitant to comment fully on the taste due to the carbonation issues.

Sad.
