Barrel No. TBB 1-6 Bottle No. 652/12

Cloudy, sunset orange. Very thin cap of fizzy bubbles form before disappearing almost immediately. Looks pretty flat throughout remainder.

Really shines in the nose. Bright citrus zest. Lots of orange and tangerine. Little funk, and some oak.

Sort of loses me in the taste. While the bright spots from the nose translate well, I'm picking up on the cacao and it is completely out of place for me. Mouthfeel is really nice. Nice tartness. Crisp and light-bodied. Would be hard pressed to peg this at 10%.

The whole cacao aspect detracts from me liking this beer more. Take that out, and you have a pretty decent sour.

"Brewed with natural favors added and with cacao added and aged in Chardonnay barrels."

Barrel number. TBB 1-6; Bottle number 1275/12

Pours a hazy, almost light milky, orange with a short-lived thin white head.

Nose is bold, assertive and distinctive with bananas, tangerine, white grapes and mixed spice. Pleasant and complex. Acidic stone fruit and a hint if citrus make pretty nice. You can find Chardonnay but its light and found only because you know it's there.

Mouthfeel is rich and bold, full bodied and big. It is a real mouthful of bold assertive favors.

Labeled a "saison regal" it is very much a good saison...on steroids! Saison profile in all respects but with more intense banana, stone fruit, hint of salt and a cacophony of spice and green herbs. There is clearly a Chardonnay flavor profile. This flavor profile is very food friendly, pleasing, layered and complex. An intense flavored beer but well balanced. I get no cacao at all, however.

Finish is layered and also complex. Green and herbaceous, hint of celery and salt. A green pepper bitter character in finish as well.

All in all very nice

Appearance- Pours up a tremendous amount of head that looks to have really good retention. The head is a fluffy, cotton white while the body is a dull, pale amber which appears as a golden, pale amber when held up to the light. Considerable lacing has already been left behind. There is a bit of haze to the body.

Nose- Starts off with big, stinky cheese from the bottle. Very umami with notes of mustiness and armpit. The glass hues closer to the standards with a bright note off apple with a slight undercurrent of banana. The stinky cheese flavor of the bottle fades and shows some leafy greens and a bit of asparagus. Weird but it seems to work. Especially considering the cheese notes that preceded it. I'm guessing the green notes come from the endive. I also got a small amount of pumpkin on my initial sniff.

Taste- Very vegetal for a saison. While the overall flavor profile is dominated by apple which pervades the palate, this apple is punctuated by various other notes- some pumpkin, leafy green notes from the endive, some nuttiness, a bit of squash. Lots of umami that works with a certain slight sour aspect. Definitely a bit of savory note of cheese as well. To say the least, this beer is interesting and involves a few notes not normally associated with beer, even craft beer. Slight touch of chocolate and a slight bitterness that hangs around the edges. Not really sure what to think of this. It's definitely good but I'm not sure if the oddities propel it beyond that. I don't get a hint of alcohol which is pretty impressive for a 10.4% saison. Some citrus hangs around the edges and on the finish. Mostly orange that tends toward peel. I think the pumpkin might detract in this beer but I think it almost might be contributing to the savory and umami cheese aspects. It's hard to tell but I think this is definitely a pretty good beer. Not great by any means but I understand the love. Incredible complexity for a saison that doesn't muck the sublimity that should define a saison to a certain extent. Some flavors are a little distracting but their positives outweigh the negatives. Very interesting experiment.

Mouthfeel- Between light and medium bodied but closer to medium bodied. Seems a bit thick for a saison and the carbonation is a little lighter than expected. Sometimes airy but does have some zing. Doesn't really have the dryness you expect with a saison.

Drinkability- Very easy to drink and never boring. No sign of heat but this is not cheap. 22 bucks for somewhat of an unknown is a little much for me and it doesn't really live up to it. I gave Trinity a shot but I don't think I will buying their 20+ bottles again.

Overall- Really good beer that is very playful with the style. I enjoy the oddball flavors which still allow the basic sense of the saison to come through. It's worth a try but if you think the price is too much, you're probably right. If you've had a lot of saisons and want something different, this might fit the bill.

Foamed over on opening- hate when I do that. Pours a hazy orange with a quickly dissipating head. Tang from the chardonnay barrels is the dominant theme in both the nose and flavor profile. Overwhelms the cacao nibs to me, but good in its own right. Dry finish.
