750ml to snifter
The second the cork comes out this beer is ready to escape. I only lost a few ounces, thanks to Tim's heads up! Once the carbonation calms down this is a very pretty beer. A little darker than I expected for a peach sour, but a beautiful amber orange.
The aroma is where I am convinced. The stone fruit is there, but so is a near perfect level of funk. Oaky, dusty, beautiful.
This tastes much better than I was expecting. It is definitely on the sour side of things a la ddg, but the peaches are there, and a lot of funk. Quite sour, but complex, the flavors are pretty amazing.
M- Medium to high carbonation, very puckering, but finishes dry.
O- This was much better than I was expecting. World class beer. West Ashley is still probably my favorite example of style, but this is exceptional.

Dark brown-orange appearance, effervescent. Nose is of ripe berries, lemon peel, oak. Flavors follow, accented with subtle notes of cherry cola and toffee. Heavy suggestions of rhubarb and lemon peel toward the finish.
An absolute knock out beer. I took this out of my cellar 4 years ago and has been sitting at room temp…no negative impact.

Opaque almost neon orange, looking like a modern haze bomb but smoother and cleaner, with minimal head.
Soft peach, honey and oak are tart with a woody semi-dry swallow capping off the tingly medium body.
