Modeled after the great Trappist and Monastic beers that inspired the founding of our brewery. A richly deep garnet colored ale created from a blend of Domestic and imported malts. As part of our commitment to interesting brewing endeavors, Chef Vince created a special raisin puree for this beer. Malts, raisins and a fantastic yeast strain working in harmony produce a beer of amazing complexity and depth.

On tap from Eureka UTC. Would have liked a bigger sample, but... the claim is 14 oz. I don't know.

To the beer: Deep brown, copper with a tight beige head that left some impressive lacing that lasted the entire glass. A subdued aroma where spice dominates the nose, some malty sweetness suggestive of dried fruit, and a hint of earthy yeast. The flavor expands greatly on the aroma. Spice becomes cinnamon, clove, pepper, with a dash of lemon zest. Dried fruit flesh out to dates, figs, and mainly raisin. Yeast maintains its earthy character. Certainly not as big as the Belgians that inspire this.

look: deep read, slightly cloudy and opaque, head is fine and creamy. long lasting. a pretty beer.

smell: malty yeasty, sweet, brown sugar, honey raisins

taste:raisins, malt, brown sugar. alcohol well disguised, hop finish is well balanced. Nice drinking ale, well rounded and pleasant.

feel: high level of carbonation, a bit acidic
