Service Temp. 50 degrees. Service Glassware, 12 ounce Tulip.

Raisins that are used with 'de Tomme, sure I'll try.

Appearance, is dark brown & with little or no light. The beer itself pours a strong light brown head that dissolves quickly, leaving no lace behind.
Aroma, is roasted, with medium raisin, some figs, and a honey sweetness.
As I swallow this I detect strong to medium alcohol, medium raisins, strong roasted, some dark spices and a medium mouthfeel.

Bottle split into some tulip glasses. Had been cellering it for maybe 8 months before temptation gave way for Canada Day. Appearance is a dark ruby brown, good initial head of tight tan foam, and good lacing and retention.

S - Caramelly raisins, figs, a bit of a leather note, plummy, quite rich with an overall stewed dark fruit character, raisins being the most prominent. Subtle balance.

T - start is very robust, a big play of plums, alcoholic raisins, as it warms it got a bit more rambunctious. Some figgy notes, lemon, dry leather, more plums, and getting really quite dry towards the end. Dark fruit in essence but it is very lively, prunes, raisins and plums as well as lemon, all mixed with a boozy mildly spicy mix. Dry and SOFT finish (margarete c).

M - has an initial soft carbonation, which helps balance some of the heavier alcohol notes, holding on the palate this volatility starts to come forward. A big beer, but balanced quite well enough to pair with a steak dinner. Leaves a dry lingering dark fruit and raisin character.

Good quad, and certainly the raisins were a forefront character in this. Didn't quite hit the mark on balance, as I felt the alcohol was a bit too perceptible once it warmed, still quite tasty and drinkable, but I wouldn't put it in top marks, it falls short of the complexity and balance I would expect in the best belgian quads. Still a quite respectable beer and rather unique in its own regard.

On tap at the brewery in San Marcos.

Pours clear but near black with a white head that soon reduces to a ring but leaves some lacing.

Aroma: boozy aroma with some dark roasted grains and spicing.

Flavor: more funky and less fruity than the aroma, but not challenging to drink. Lightly bitter finish.

Feel: medium-full body; medium, lightly crisp carbonation.

O: good, but ABV is too high and complexity is too low.

Served: On tap in a snifter.

Appearance: Very dark brown with a short light brown head that dissipates quickly.

Smell: Faint yeast and malts.

Taste: Comes in waves. First is the very heavy malt and caramel taste, followed by slight bitterness, and ending sour with a very pronounced alcohol burn. Has some of that raw peanut flavor of a lot of Belgium-style beers, but not too much.

Mouthfeel: Thick and mildly carbonated. However, it does not leave a residual texture after the alcohol flavor kicks in.

Overall: Very good sipping beer. Complex flavor and well-suited mouthfeel.
