Formerly known as "Serpent's Stout - Bourbon Barrel Aged With Cocoa Nibs & Coffee"

A fresh track, Track 10 began as a fresh Serpent’s Stout base aged in bourbon barrels with oodles of coffee and cacao nibs added shortly before packaging.

Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpent’s Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included.

We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 pounds of Ryan Brothers Coffee and 4 pounds of TCHO Cacao Nibs to steep before packaging.

Poured from fridge into taster. Warmed over an hour. Pitch black with a beautiful brown head. Good carbonation. Smell is incredible. Tons of coffee, some chocolate, and some roasted malts. Bourbon notes are not too strong. Taste follows the nose - lots of coffee, cherries, raspberries, chocolate, and vanilla. Some bitterness. Overall - it's amazing.

375ml corked and caged bottle poured into a matching lost abbey teku. This is easily in the top 5 for the most difficult to remove corks. The brew appears black with a fine edge of brown clarity around the perimeter when held to the light. The cap is dark brown about a finger strong that fades leaving spotty lace.

Initially the aroma is super fudge-like smelling of brownie or chocolate cake batter. All milk chocolate, some roast and earthy char/coffee. As it warms up, some booze emerges along with caramel/vanilla oakiness. This smells so sweet, its hard to believe its beer...until you take a sip.

The taste is milk chocolate blending to a dark fruity rasiony alcohol aspect with complimenting bourbon, slight citrus coffee and neutral woodiness faintly in the aftertaste. Whereas the nose is out of control sweetness, its a pleasant reassurance that the flavor is not that sweet, though it is boozy and roasty. The aftertaste is bitter from a combination of strong coffee, roasted grain and subtle herbal hops. As the beer warms up, it becomes a sort of smokey molasses monster and I like it a lot.

This is medium to full bodied with moderate carbonation. An impressive rift on serpent stout. The belgian influence is still recognizable in this, though the alcohol is really ramped up and the chocolate is almost...almost too dominating. The coffee is still evident in this though it seems a bit faded yet still works. I really enjoyed this and certain would drink it again if the opportunity presented itself.
