375 mL bottle poured into a snifter. Reviewed from notes.

Appearance - No pop, no head, no carbonation at all. Yellow and slightly hazy.

Smell - Lemon and stone fruits. Acidic and a like funky. Smells a bit lambicky.

Taste - More acetic than I expected. Lemony with lots of wheat graininess. Very citrusy.

Mouthfeel - Flat, but otherwise easy drinking and a pleasant sourness.

Overall - Reminds me of Isabelle Proximus without quite as clean of a sourness. This one is more Belgian in its sour character.

Thanks Todd! Served next to Cable Car for shits and giggles.

A - Pretty much still. A very faint smattering of bubbles dissipate to nothing. Transparent golden strawy body.

S - Lactic acidity, stone fruits, tropical funky, oaky vanilla, and mild white wine vinegar in the periphery.

T - The taste is similarly sour, with hefty doses of lemon, under-ripe stone fruits, tart grapes, and oaky vanilla. Less sweet than the aroma suggests, but manages to stay on right side of the acidity scale.

M - Largely still, but that doesn't offend me as this has an Selection Lambic kind of vibe going on. Super dry, medium body, and quite oaky and tannin heavy.

D - This is quite good, and a few bubbles would probably elevate it to world-class. The acidity might be too much for some constitutions, but I'd happily drink an entire 375ml bottle. Seems like Tomme could whip this one again if he so chose, so hopefully he does.

Track #3. 12.7oz bottle. No date.

Look: Hazy yellow, thin white lacing

Smell: Bready, horsey, barnyard, apples, citric, spice, herbal

Taste: Lactic, sharp, acidic, oaky, medicinal, herbal, mint, tart crab apples, nectarines, grassy, lemons, pithy, earth, dry hay finish

While drinking this blend of Mellow Yellow (sour base beer) and Phunky Duck (one component of Duck Duck Gose) I don't hear Hell's Bells, but I'll gladly ring them after I'm done with this fine brew.
