Notes/Commercial Description:
We’ve never released a Bourbon Barrel version of our Judgment Day. So we thought it might be interesting to take the base beer for Cuvee de Tomme age in first fill Bourbon Barrels and let mother nature take over. Of course, because this is a Rock and Roll inspired Box Set beer, we couldn’t just leave well enough alone.

Upon sampling the base beer, it became apparent that the raisins used to brew the base beer were going to drive the flavor bus of this beer. The conversations turned to Oatmeal Raisin cookies and the essence of a freshly baked treat. So we added some cinnamon sticks to the barrels and threw in some dried chiles as well.

Pours a dark brown with a thin off-white head. Smell is really nice, a great mix of vanilla from the bourbon, cinnamon and sweetness - a bit like a cookie. Flavor is heavily cinnamon up front and finishes a little sweet and chocolatey. I'm not getting much from the chiles here, disappointingly. Mouthfeel is medium-full bodied with nice carbonation. This is a tasty, very creative beer. I wish it was a little more chile-forward, but I can't complain - well done and tasty.

Dark, murky brown, nearly black in color, though not truly, with moderate dark brown foam. Leaves the glass oily. Thick and substantial in the glass.

As advertised. This one delivers. A wonderful concoction: warm, fresh baked goods (oatmeal raisin cookie/zucchini bread), with vanilla and biting bourbon, distinct chile character, and dark fruits. Fantastic aroma.

The flavor is just as successful with all the individual ingredients making their presence known in distinct, discernible, delicious ways. Oatmeal raisin cookie, earthy and warming chile character, coconut notes. Fantastic. Well integrated.

Full in body with low carbonation. Decadent.

An outstanding achievement. Curious to see how this one ages, but it's so delicious hanging on to it would prove to be a challenge.

A - Raisin brown with a hazy body

S - Raisin, brown sugar, light cinnamon, vanilla, and pepper spice that makes a nice nose

T - Nice raisins, good cinnamon and pepper spice. There is a good malt base in this as well that gives it a nice sweetness. Cinnamon and slight spice remains on the finish. Really a nice and complex beer that brings together a multitude of flavors very well

M - Light and slightly watery. Has a slight warming presence from the peppers and cinnamon. The finish has a light spice and oak that leaves a tingling on the tongue

O - Overall, a really solid beer that blends together a variety of flavors really well. This good blend of flavor that lets everything shine without overpowering anything else is what makes the best tracks standout

Not very aromatic - a little cinnamon, dark fruits, light barrel. Taste is fairly dry - some richer fruits, nice marriage of cinnamon and chile with a very slight warming sensation. Do not get much rich bourbon booze or any booze at all off of this.

Enjoyable barrel aged beer, but leaves much to be desired.

12.7oz caged and corked bottle, courtesy of the good doktorzee. How retarded is this, having to 'submit' a rating, before I even crack this open? Whatever - back to the matter at hand - I like the inferred satanic nature here - and I don't see 'Number of the Beast' written anywhere on the label.

This beer pours a dark, murky russet brown colour, with a teeming tower of rather puffy, loosely foamy, and fizzy tan head, which leaves a bit of sparse remote islet lace around the glass as it quickly subsides.

It smells of musty, boozy Bourbon, dried black fruit - so, prunes, raisins, and figs, mostly - gritty, bready caramel malt, an indistinct warming spiciness, and a further earthy, dusty essence. The taste is more sugary Bourbon up front - caramel, vanilla, alcohol heat, and a mild grainy spiciness - followed closely by a muddled and equally sweet dark fruitiness, dead yeast, ethereal chili notes, and a sort of metallic edginess, which I'm going to attribute to the cinnamon, whose attendant savouriness probably just got lost in the morass.

The carbonation is quite active and anywhere from fizzy to frothy on my upper palate at the given moment, the body on the light side of medium weight, and actually more or less smooth, the sugary nature not really facing any sort of non-alcoholic (ha!) interference as such. It finishes on the sweet side, still, the barrel hooch, caramel malt, and fruity adjunct ruling the roost.

A pleasant enough rendering of a besotted wood-kissed Quad - the sweetness is somehow tempered, the booze even more so, such that any initial trepidation is gone by sip three or four. Neat trick, that. I'm not sure that the raisins, cinnamon, or chiles really have much overt effect on the overall flavour, it's more likely that they simply contribute to the burgeoning complexity.

375 mL bottle poured into a snifter. Reviewed from notes.

Appearance - Brown with a few bubbles. Just a thin white collar.

Smell - Bourbon, vanilla, a ton of caramel. Smells like it's going to be sweet. Cinnamon is strong.

Taste - Yeah, it's sweet. A ton of caramel and cinnamon. Barrel lends a nice bit of bourbon and oak. Spicy bite in the finish.

Mouthfeel - Low carbonation. Very sweet for a quad, if that's what we're calling it.

Overall - It's too sweet for a quad, but the flavors otherwise blend quite well.
