Poured from a 22oz bottle (batch #4 - Feb 2010) into a Chimay chalice.

A - Poured a deep dark ominous purple-ish brown with a nice yeasty off white head with sticky lacing.

S - Dark fruit. Plumb, grape, fig, alcohol.

T - Dark and sweet. Follows the nose, but a bit sweeter.

M - Creamy on my lips and smooth all the way down. Almost like a nice thick beer milkshake, but enough carbonation, bitterness, and flavor to feel like a beer. Leaves a bready cooling aftertaste, not as dry as some other quads I've had.

D - Pretty drinkable quad. Soft and smooth and packs a punch. Not the kind of beer I'd have a lot of in a night, but one that I'd have again.

Poured into a chalice a rich burgundy infused russet with a thinner tannish colored head atop.Funk and more funk overtop of dark fruit in the nose, maybe the most funk I have come across in a quad.Cakey with dark fruit flavors the at turn into quite a funky finish,Iam not a fan of funk so it kinda turned me off a little.A well made beer but I think the funk is heavy handed for the style.

Had this on draft at Ciro's (Tavern on Cherry) in Woonsocket, RI to kick off their new Mug Club.

A - Pours a deep, brownish amber. Tan colored head is frothy and creamy. A bit of lacing. Looks pretty nice in my snifter, almost too good to drink, almost.

S - Aroma is a bit muted, but smells pretty sweet. Plums and cherries notes. Yeasty too, kind of like sourdough bread.

T - Fruity and sweet (neither overpoweringly so) with a malty backbone. Tasted acidic at first but much less so as the beer warmed up a bit. Plum flavor is definitely there, particularly in the finish. A cloying beer that stays on your tongue.

M - Medium bodied with a medium carbonation level. Lighter on the tongue than I expected.

D - This is not a style that always ranks high on the drinkability scale, but this beer definitely does.

A- Cloudy brown, moderate carbonation, big off white head that fades to a covering leaving some lacing.

S- Light dark fruit aroma of figs and some caramized sugars.

T- Like the aroma but more full. Dark fruit, figs and raisins. Some sweet caramel with a kick of alcohol at the end.

M - Moderate body, tingle of carbonation, and warmth of alcohol...just like a quad should be.

O - A nice Belgian style quad, one that I will try again.

Batch 3
Bottled Oct 2009
A garnet colored beer with a rim of tan head. Dark fruit and sweet malt aroma.
Taste of raisins up front, followed by a sweet taste of brown sugar, with a peppery finish.
A very smooth beer.
Eminently drinkable, a beer to sit back and savor.

Pours a clear medium brown with almost no head. Thinnest of light tan collars. Aroma is of toffee, medium malt sweetness and a healthy indistinct nutty-fruit. Taste is deep fruit, medium malt and woody-nuttiness. Kinda thin body, with medium to low carbonation.

Bomber bottle, tape over the cap says "Bottled July 2009,Batch two". Pours a moderatly dark shade of brown, murky and welcoming. The Frothy head is dark khaki, long lasting and leaving a rich collar, then well developed and quite beyond respectable sheeting/lacing. Nice looking beer. The sniff is soaked in ripe dark fruit, raisins and figs. Full flavor and quite tasty brew. Dark Belgian beer lovers rejoice. Loaded with notes of rum soaked raisins, ripe and goey figs and plums. Pleasing mouthfeel and smooth finish. Alcohol present but well folded into all the other good stuff going on here. Classy sipper, night capper, dessert beer. Well done, PT crew...

It pours a dark brown, with a creamy chocolate color, with a touch of grey to it. It's head is a lighter color--not true white, but a light yellowish color about a finger's width wide, with tight bubbles. It smells a little like caramel to me--I can't really gt any other sense of the smell, and its very faint--there's maybe a touch of an earthy scent, but that's all, really.

This beer strikes me as relatively cool, for a beer of its strength--it doesn't warm me up immediately, and it goes down smoothly. The first actual flavor I notice is one of sweetness--again, a sort of rich, caramelly sweetness. I can sense some dark fruit, but can't get the plums themselves. The beer almost seems to have a creaminess to it as well, both in flavor and texture--the mouthfeel is both thick and smooth. It doesn't have a lot of a flavor kick to it, but it does make it extremely easy and satisfying to drink.

I absolutely love this beer. It's one of my favorites. I'll be buying it again, and again, and again.

Dec 2010 tag.
Pours one fingers worth of off white creamy head. Cola
colored clear body.

Smells of Carmel, earthy hops, some figs and plum. Touch of alcohol mixed with big fruity esters.

Taste is sweet dark fruits, cherries, plums and grapes. Mixed with Carmel and earthy hops. A sharp and lingering metallic taste just about ruins this one. It's a bit disappointing to be honest.

Mouthfeel is medium thin. Medium carbonation. The finish is a touch oily to go along with the metallic taste.

Overall this had some good qualities but the metallic finish hurts this one quite a bit.
$6 a Bomber

Appearance: 1/4 inch head, dark leather brown in color, clear, high carbonation

Smell: bread and toasted malt. Not as strong a smell as I getfrom other quads.

Taste: bread, toasted malt, cinnamon, and dark fruit

Mouthfeel: medium carbonation, light body, sweet start with a bitter/dry aftertaste.

Drinkability: A nice and complex beer and certainly one I would get again. I like the breadiness and fruit. There are other quads I would reach for first. However, I would still reach for this over several other beers across styles. A good beer, in a style with several excellent brews.

Thanks to thirdeye11 for sharing this bottle.

Pours a reddish-amber color with a white head. The aroma is a lot of malt with some fruit. Not as much aroma as I expected. The flavor is better, with caramel malts, dark fruit (cherries and plums) and some Belgian candi sugar. No detectable alcohol. Creamy mouthfeel.

Bomber enjoyed at a recent beer tasting - cheers Brad!

Poured into a wine glass. Amber tawny, nice haze, billowing head that recedes into a thick ring, good lacing. Nice looking quad.

Nose is Belgian yeast, citrus, plum, fig, chocolate. Lovely quad smell.

Decent quad, all the usual flavors are there with a bit more spice than I could detect in the nose. Enjoyed the fig-plum flavor. Lacking the depth of some of the monsters of the style, but still quite enjoyable.

Aggressive carbonation - might have been a bit hot - thinner bodied.

Worth checking out, certainly for the brewery's sake (and for the bottle artwork). While it's not the most complex quad this side of the Atlantic, it's certainly quite tasty.

This belgian quad appears a fruity raisin brown and smells like a mild yeasty belgian ale with a hint of the dried plums. The name quadruple to me is a bit bold, this is a beer which hides its alcohol well and comes off as a tripel or double. The beer is full bodied with a very delicate mouthfeel which blends amazingly with the dried plum flavor. Baby Tree won't blow you away with intense hoppy or yeasty flavors but to me is a well balanced and enjoyable fruity belgian that I could recommend to anyone.

22oz bomber poured into an Ommegang tulip.

Pours a nice ruddy dark brown with a small light brown head. Nose is all malt and dry dark fruits.

Taste is rich and sweet but still it's not too dry. It's got lots of raisins and dark fruit. It's really got a nice rich mouthfeel, very tasty and drinkable.
