First time trying anything from this brewery. They seems to be pretty new to the Quebec microbrew scene, unless I just haven't seen it before.

Poured into my "La Vache Folle" stange glass. Foggy, murky beer with nice 3 fingers of head. Says it's bottle fermented, so that would account for all the yeast. Nice lacing, head lasts quite a while.

Citrus right away, candy, grapefruit, spices - cardamom, cloves. Amazing aromas coming off the beer.

Bitter right up front with a bunch of alcohol. Taste differs from the nose, less complex at the start - overpowered by the Boose and the bitterness. Some spices in there, with hints of citrus, grapefruit. Some minor sweetness lingering in the background. As I keep drinking this one, I'm starting to enjoy it more, the spices are coming out now, lots of cardamon. The body is think and chewy.

This was definitely a beer that takes some time for your palate to get used to. I'm a huge fan of big, bold bitter IPA's but this took some getting used to. Probably could not drink more then one of, but it was complex and quite different for the style. I'm curious to see what their double IPA is like.

Tasty! Strong flavor of orange, followed by peach and citrus. Good and long bitterness.

A: A darker golden color. Great looking head coupled with nice lacing and good retention as well. Clarity is good.

S: Soapy, very soapy. A little bit of hops floral and a bit citrusy.

T: Perhaps the soapiest IPA i have ever had. The hops really present themselves in this manner. A bit of citrus as well. A slight bit of biscuit malt as well. Bitterness is firm and maybe just bordering on harsh but doesn't linger at all. Maybe a bit of a pear or apple ester but it's minor in the over all beer. Not the hops kick I was looking for and a bit lack luster. Balance leans toward the bitter end of the spectrum.

M: Moderate body and nice mouth feel. Pretty dry and leaves you coming back for more after every sip. Carbonation is well done.

O: A bit sub par IMO. It's okay but nothing i'd pay for again.

500 ml bottle, served with 3 other IPA.

Poured in a Riedel ouverture red wine glass

Nice golden color, with a good foamy head. Pretty light color overall comapred to many IPAs.

Really seductive nose reminiscent of peaches, citrus (but in a subtle way) and nice floral aromas. Really elegant and appealing, and quite distinctive too.

Really balanced, alcool is well integrated, rich and long, with a good bitter finish. Great drinkability, dry and fresh.

I'm pretty impressed, as it's a pretty dry american style IPA made 100% from quebec's malts. 7% acl./vol., 65 IBU. Colombus, Centennial and Cascade hops.

Quality of recent bottlings really dropped. New brewer doesn't quite nails it.

A:
Pours a lovely looking cloudy gold with an extremely active creamy, gloriously clumpy, beige head that takes its sweet time in settling down to something manageable. Excellent retention; thick, gloppy lacing. Pretty carbonation and a touch of particulate presence. Really well-done.

S:
Nicely balanced aroma on the whole, crisp and clean . Pronounced hop presence with really solid grapefruit and fresh-cut grass smells. Fairly straight-forward but well put together.

T:
Mildly sweet but with a good hoppy kick. Citrus and bubblegum with a bit of an earthy finish to remind you that it is an IPA. Really smooth interplay between the hops and malt. Not bad at all.

M:
Nice and sharp while remaining delectably creamy. Great strong carbonation to offset the hops. Lingering hop tingle, but not overpowering.

O:
Really good beer. Was not sure what to expect. For "only" being 65 IBU it is a stand-up IPA. Definitely one of the better ones I have tried in Quebec. Whole experience straddles the line between sweet and bitter. Honestly I would say that the sweetness is more up-front than many people might like, but it is well-balanced and quite complimentary to the hops.
Would drink again. Worth finding.

The beer is copper in color. Veiled. Nice head on top of it. The color of the head is beige and its dense, tenacious too. The aroma is fruits... Mainly tropical fruits (citrus and grapefruits). The aroma intensity is between light and medium, it would gain in being stronger if you ask me.

The taste is dominated by tropical fruits. If you like fruity IPA, then you are in for a treat. I like this one quite a lot. Some malts in the end. Well balanced. Effervescent in the mouth, maybe a little too much for me and for an IPA. Medium body. Delicious.

Bottle from Sammy, 500ml into a tulip. Lot 1112-105.

Unfiltered amber/orange with a dense white head (comparable to the DIPA in this regard), again with retention so strong, it's almost to the point of inconvenience. Tons of lacing. Nose of citrus fruits, mostly oranges and some grassy/piney notes as well. Kind of reminds me of a milder version of a Mad Tom IPA. Sweet malt base beneath is evident as well. Big juicy tangerine and orange notes, sweet malt character, a bit of resin and some yeast character (this entire series appears to be bottle conditioned). Sweet and only a tad drying, modest bitterness. Much better than the DIPA from the same series in all regards, and certainly much truer to style. Low carb, fairly full body and all around more satisfying. A solid beer.

Bottle: Poured a deep orangey amber color ale with a nice huge foamy had with excellent retention and some very good lacing. Aroma of floral citrus hoppy notes are quiet pleasant. Taste is a nice mix between some semi-sweet malt base which are well balanced against some floral citrus notes and a bitter finish. Body is quite with limited filtration and good bottle conditioning and great carbonation. Nicely done and other winner from this brewery who just keep doing a good impression on me.

Relatively sure this is the beer I'm in fact drinking/reviewing. The label reads "Hopkins India Pale Ale" with a short description of "Strong Amber Ale on Lees" above that. 7.0% Alc.

A: Pours a cloudy peach-amber colour with an enormous foam head that's slightly creamy looking. Quite a good retention and good lacing.

S: Lots of citrus, rich bread-like malts, faint orchard fruit smell (apples or pears), and some yeast and clove reminiscent of a belgian-style.

T: Somewhat similar to the smell, but taken down a notch or two. Hop presence that is kept in check with a more subdued malt backbone that works well. Real nice and surprising fruit profile with citrus and orchard fruit coming through. Alcohol well hidden. The more I drink this (or the warmer it gets) the more I'm liking it.

M: Oily and a medium body with a moderate amount of carbonation.

D: Quite a good IPA that I'd purchase again. Tart citrus and faint crisp orchard fruits compliment each other well and make for a unique and tasty IPA.

On tap at the brewpub, this has become a staple here. A light blond colour, yet a decent hop aroma and bitterness from Colombus and Cascade. A little light mouthfeel.Some nondescript malting, needs improvement to compete in the style in mouthfeel, balance.
