I've been hearing a lot about this brewery, and great to add another good brewery to Texas finally. An interesting beer I've been excited for, wild ale with raspberries aged in wine barrels. Thanks to ApostleBrewing, 2012 vintage. Poured into my Ommegang tulip.
Pours a small fizzy pinkish head that doesn't even cover the beer and fades very quickly, although it does leave a touch of lacing, typical for a wild though, over a hazy slight sediment laden strawberry reddish color.
Nose is loaded with fresh raspberries, just pure raspberries with both fresh fruit and juice, with hints of a light white grape juice and wine like, touch of sour cherry and tart fruit, and the slightest hint of funk. Just so much bright raspberries, awesome.
Taste starts quite tart, sour fruit, tons of raspberry again but not as much as the nose, tart raspberry, not so much fresh fruit but some juice as well. Acidity kicks in with a big acid bite, with some light funk, a lactobacillus sour fruit and acidity with very little actual funk flavors. Later on a light barrel comes through, with hint of toasty vanilla, and just a bit of a light vinous floral wine. Finish has a light flemmy feel to go with the tons of lingering sourness, tart raspberry, etc. Later on the finish the toasted oak comes through quite a bit with a light chardonnay like wine flavor, and lots of berry.
Mouth is med to lighter bodied, little too much of a flemmy finish, big acid bite, little carbonation.
Overall pretty good, I love the raspberry on the nose but wish it came out a bit more on the flavor. The lacto is great, nice acidity and sourness, pretty much no malt in there, but the barrel adds some decent flavors, which I wish came out a little more on the forefront.

650 mL bottle poured into a snifter. 2012 bottle.
Appearance - Pale pink body. Small white head. A few wisps.
Smell - Raspberry is strong. Jammy. Some white wine. Not a ton of acidity.
Taste - Musty raspberry. Slightly sweet. A little bit of white wine but it is lost among the raspberry.
Mouthfeel - Medium body. Raspberry makes it heavy.
Overall - Raspberry is tasty but it takes away from all the nuances of the base beer.
