Barleywine is a beer style that basically has a lot of everything in it. Lots of barley, lots of hops and lots of alcohol. Due to the abundance of ingredients, when barleywines finish fermenting, they have a fairly harsh flavor to them, therefore they need an extended period of conditioning in order to let all of the flavors mellow out and blend together. After the lengthy conditioning period, we end up with a very malty, very hoppy beer that is smooth tasting and balanced, despite the high ABV. Our Barleywine is brewed by mashing in twice and using the sweetest wort from each batch to create a very high gravity wort. From there, the wort is boiled and over 21 pounds of Amarillo hops are added throughout the boil. It is then fermented with yeast from the Thames River Valley in England. Once it is done fermenting, it sits at 38 degrees F for over 3 months. Originally, we brewed this beer using a double mash of our Frostbite recipe, which is why we call this beer “Twice bitten” Barleywine. This beer should only be served in a snifter.

Twice Bitten Barleywine has a ruby colored body with purple highlights. The short, off-white head is pretty solid looking and it does manage pretty good retention and lacing.

Lots of estery fruit and some caramel malt. A bit of alcohol heat. The dominant smell is definitely Amarillo hops though, with all kinds of resin and pine aromas.

This is a hoppy barleywine, which was about what I expected from something labeled at 100 IBUS. Twice Bitten has plenty of sweetness and loads of bitter hops. A slight caramel flavor pairs with sugary sweetness and lots of fruit esters. The hops are all over the place, providing the beer with bitterness and a good bit of piney, resinous flavors. The finish has a touch of heat.

Low carbonation, full bodied, pretty good.

This one really impressed me. If you like a hoppy barleywine, Twice Bitten is for you. Best beer I had from either of the brewpubs in Lake Placid.

Off the tap at the brewery this (2008 vintage, 9.2% ABV) brew was a deep, cherry-wood color with a good amount of rising carbonation. The one finger of khaki head retained nicely as a thick cap and left outstanding lacing. The aroma was of Amarillo hops, alcohol heat and esters, and sweet malt. I definitely thought it more hoppy than your average Barleywine aroma. The flavors started with caramel malt and wood, then went into the big, hoppy bitterness of pine and resin along with some punchy alcohol heat. The 100 IBU was very apparent and did not seem properly balanced by enough depth in the malt. I also thought the sugars needed to be pumped up to balance the alcohol. Acidic and oily due to the strong hops presence. The mouthfeel was velvety, the carbonation delicate and the body full. An interesting interpretation, but it struck me as misbalanced.

Vintage 2005

The beer pours a ruby red color with a 1/4" offwhite head that fades to spotty lacing. The aroma is good. It has a rich, warming burnt toffee scent that seems quite bitter as well. It's sweet with some roasted malt aroma. The taste is good as well. It has a young barleywine flavor; sweet and bitter with a nice crystal malt presence. This is a vintage, but it seems young still. It's not dry at all. The mouthfeel is fine. It is a full bodied beer with low carbonation. This is a good drinking beer. I would like to try this in about two years. It's damn flavorful with excellent complexity.

Year 2005 vintage served from a growler.

Pours a clear dark ruby amber color with visible effervescence and a full finger light tan-orange head that fades slowly to the surface. A nice amount of lacing is present.

It smells very sweet, bread-like malty with a mild citrus and dark fruit character with shades of the alcoholic content.

The mouth feel is on the heavier side without being syrupy. A smooth, creamy texture nicely balanced between the presence of hops and carbonation. The smell and the mouth complement each other.
The flavor is sweet and malty as well. The 9.8ABV content is well designed and presents subtle warmth to the light caramel finish.
