Revolution Brewing is pretty much the definition of a "hidden gem." Located in the small town of Paonia, it's about 45 minutes from Delta, and tucked between the Grand Mesa and Gunnison National Forest.
The tasting room is located off of the main street in town, Grand Ave. in a house that has been converted into a bar/biergarten. There are tables in front and on the porch, a 5-7 seat bar inside (with 4-5 tables), and an 8-9 table biergarten with live music in the back.
A large chalkboard near the bar reveals what's on tap for the day and includes a quick style description, ABV, etc. Usually there are 4 beers on tap at any one time, and there are homebrewed sodas as well.
In my two trips, they had SEIPA (an American IPA), No Name Porter (a dark Rye with porter character), Colorado Red, Cherry Co (an IPA brewed with local cherries), a stout I can't recall the name of, Grand Ave Lager (an old school pale lager), Jesse's Garage (a pale), and they tend to alternate these pretty regularly. While they might only have a few taps at a time, there's always something for everyone. In addition to the beers, they had a cherry soda that's among the best I've ever had, and a really nice root beer, too. All of the beers I had were excellent, and the No Name Porter was a great way to make people re-think beer styles. Colorado Red seems to be the flagship, and I'd be shocked if this beer didn't spread like wildfire if they chose to distribute it. Occasionally they'll can it and sell it on premises or at the local shops. During the summer they couldn't even keep it in stock.
Hungry? They have homemade sausages and snacks here and there, and unlimited shelled peanuts all the time.
If you're in the area, I can't recommend this place enough. The staff is great, beers were tasty (and cheap), and it's just a genuinely nice place to be. It's well worth the drive from Delta, Montrose, Ouray, Powderhorn, etc. and even worth a trip from Junction.
Also, if you're in the area, I *highly* recommend the Flying Fork just up the street. The food's amazing, and they carry the Revolution Brewing beers on tap there as well.

EDIT, Summer 2011: I guess they're expanding into a new larger brewhouse. In all honesty, I think these guys can do REALLY well on the western slope as their beers are every bit as good as the top spots in Denver. In some ways they're even better. (2,374 characters)

One of the coolest breweries in Colorado, amazing vibe and people, great beers, cool town, beautiful part of the state. The Brown ale was especially delicious, and the attention to local ingredients and is pretty righteous... go there now. You will not be disappointed. (269 characters)

An amazing little brewery tucked into the small town of Paonia, Colorado. Amazing quality of beers (and variety) for a small brewery serving a mostly rural area of Western Colorado. A truly local place, the beers made with local fruit are a highlight, and the local lamb bratwursts are the best beer snack I have had in a long time. Worth a detour if you find yourself in the region. They also sell canned beer to go, including their golden ale "Miner's Gold" and the wonderfully rich Rye Porter. Service is friendly at the bar, and the deck area out back is an ideal place to spend an evening with friends enjoying their great beer. Any beer with the local cherries is delicious. (680 characters)
