Appearance: Deep crimson red pour, strange for a dubbel, with a one finger beige head that quickly gave way to a thin beige ring around the beer. Minimal lacing on the glass.
Smell: Raisins, earth tones, figs, strange cherry notes, a spicy scent I can't describe.
Taste: This is where the beer went sideways to me, at least in a style sense. Sweet figs and raisins with coffee tones in the front of the drink with just the lightest kick of hop spice in the middle. The finish is a mix of cherries with an earthy aftertaste that seems to linger. There is no hint of trappist or belgian yeast here. This is the strangest tasting dubbel I have ever tried.
Mouthfeel: Medium carbonation, the carbonation feel seemed to increase as the drink warmed. Still easy drinking and with the alcohol notes hidden so well it would be a dangerous session beer.
Overall: Not by any means a bad beer, just not true to the advertised style. I like the beer and will have again.

22 ounce bottle into signature globe glass, bottled on 9/7/2013. Pours crystal clear ruby red color with a 1-2 finger dense light khaki head with good retention, that reduces to a small cap that lingers. Spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of raisin, plum, red berry, pear, apple, clove, pepper, cinnamon, caramel, toast, candi sugar, herbal, floral, grass, light funk, and herbal/yeast earthiness. Nice and unique aromas with good complexity of malt, yeast ester, and spice notes; with good strength. Taste of raisin, plum, red berry, pear, apple, toast, clove, pepper, candi sugar, cinnamon, herbal, floral, grass, light funk, and herbal/yeast earthiness. Slight fruity tartness on the finish; with lingering notes of raisin, plum, red berry, pear, apple, toast, clove, cinnamon, candi sugar, herbal, grass, and herbal/yeast earthiness on the finish for a good bit. Nice complexity and robustness of malt, yeast ester, and spice flavors; with a nice malt/yeast flavor balance and zero cloying flavors after the finish. Medium carbonation and body; with a smooth, fairly creamy, and lightly slick/bready mouthfeel that is nice. Alcohol is very well hidden with only a light warming present after the finish. Overall this is a nice spiced dubbel style. Good balance and complexity of malt, yeast ester, and spice flavors; and very smooth to sip on. A nicely enjoyable offering.

This stuff is golden brown in color, an unusual shade for a beer. The white foam looks innocuous enough. Odd aroma of chestnuts and some indescribably herbal tea. Hibiscus amplified.
Don't be expecting a beery flavor if you try this. This starts out with a tart sensation and some sweet fruitiness. It make me think of red currants along with pineapple guava, unripe persimmons, and sweet Vermouth. A hint of salty sweat. Then, finally there is some splash of Belgian yeast, dark fruits, and a dry finish.
If you've ever tasted Chinese medicinal wine, that would give you the idea. They call it "five flavor berry." I think it's kind of a scary flavor, but it's actually drinkable for the adventurous. I'm putting the cap on and see how I feel tomorrow before I tackle another glass. From the 22 oz bottle purchased at Bottlecraft in San Diego.

Pours a rusty brown, like overdone sun tea. Honestly the aroma was the best part of this one for me. Clove, banana peel, cinnamon candies and plums with some underlying Brett funk notes. Some similarities in the flavors, plums and brown sugar/caramel malts cut through some of the funk. The most tantalizing aspect of the taste for me, was the late hit of sour cherry in the back that gets swept away by earthy herb dryness. Mouthfeel is treading between lingering and too sticky. The sweetness stays on the tongue.

1 pint 6 fl oz brown glass bottle with branded pry-off pressure cap acquired at a local TX bottle shop and served into an Avery stem-tulip in my gaff in low altitude Austin, Texas. Reviewed live. Expectations are below average given that this is a non-sour Lips of Faith beer; they tend to be underwhelming. Reviewed as a dubbel because the label clearly identifies it as such. 8% ABV confirmed per the label.
Served cold and allowed to warm over the course of consumption. Side-poured with standard vigor as no carbonation issues are anticipated.
A: No bubble show forms as it's poured.
Pours a one finger wide head of pale khaki colour. Nicely creamy. Good thickness. Has a supple and somewhat soft complexion. Head retention is above average - about 3-4 minutes. Uneven lacing clings to the sides of the glass as the head recedes.
Body colour is a really dark amber. Translucent but nontransparent. Glows when blacklit. It's a clean appearance; no yeast particles or sediment is visible. Appears adequately carbonated.
Overall, it's not horribly apt for the style and nothing about it suggests this beer is unique or special. Expectations are still below average. No good dubbel I've ever had has looked like this.
Sm: The aroma is more en pointe. Wisps of dark fruit dominate: fig, plum, dates, prunes, maybe dark cherries. I don't know what the hell schisandra is, but I do find a sarsaparilla/sassafras-esque fruit presence mixed with some tobacco and general earthiness. Clove. Belgian candi sugar. Light bready malts. Shoe leather (as pretentious as that sounds).
There's a definite malty sweetness here which is well within style conventions. I don't pick up on any hop bitterness or hop notes, nor do I find explicit yeast character or alcohol. There are no off-notes per se, but I'm not horribly drawn to the beer based on the aroma.
An inoffensive aroma of mild strength.
T/Mf: The sweetness is more intense than anticipated. The dark fruits (fig, dates, and prunes) are actually kind of buried, and struggle to compete with a much more dominant fruit presence which I assume is schisandra. It comes off a bit medicinal, but in a tolerable way. It isn't the sticky cough syrup medicinal character you'd find in a Lost Coast beer, for example. I also find notes of miracle fruit and cherry.
Smooth, wet, and lightly creamy. Slightly soft. Overcarbonated. Medium body. Average thickness. Presence on the palate is decent, but this texture doesn't seem ideal for a dubbel.
Not oily, astringent, gushed, hot, boozy, or harsh.
The malty core doesn't feel real Belgian and the clove from the aroma is nowhere to be found. If Trappist yeast was used, I'm not picking up on it. I do find some Belgian candi sugar, which lends still more unnecessary sweetness to the flavour profile.
No hop character is detectable. I do pick up on some alcohol.
The sassafras character doesn't work here at all. It has touches of sarsaparilla/root beer, which don't really work in a dubbel. I'm also not digging the tobacco, which is unappealing on its own but is made worse alongside the equally inappropriate notes of bubblegum. As it warms, I'm getting banana and an abundance of phenols.
Overall, I'm not a big fan. While it's got some nuance and complexity, the schisandra hurts more than it helps. It's not well balanced beer, nor is it a subtle one, but it does have decent cohesion. A good dubbel has a delicate mouthfeel, a balanced subtle flavour profile, and exquisite dark fruit. This fails on all those fronts, and doesn't even have a yeast character that evokes a Belgian character - let alone a Trappist one.
Dr: Like most Lips of Faith series beers, this has a nice price point but fails to bring the quality. If you're looking for a good craft bomber at a fair price, look elsewhere (i.e. Lagunitas). This is disappointing and I wouldn't want another. That said, it's drinkable for its 8% ABV and I'll have no trouble finishing the bottle. I'd caution friends and trade partners from trying this one; it just plain misses the mark for the style. Even outside of dubbel conventions, it's just not a beer I'm enjoying drinking.
