Served this cold in my Hoegaarden glass. It poured a pale pastel yellow, which immediately triggered the color association of "white" in a Witbier. A substantial head of white foam formed, which rose above the glass in a spongy, uniformly convex impression of the lunar surface. Stubborn yeast sediment was poured, creating more foam and rendering the glass opaque.
Big whiff of earthy coriander to start, not much else besides that when the bottle was first opened. The smell dwindled over time, but it was still earthy, with a well-water quality about it.
Coriander again in the first sip, followed by grain in the form of wheat or rice. Sort of a cereal taste, but it's minor. Sweetish wheat or yeast in the aftertaste. Lacking the citrus and spiciness typically found in Witbier. Very mild.
Carbonation is weak, and the mouthfeel is thin an watery, unfortunately. Not entirely flat, but it really lacks zestiness.
It would be good in the hot weather, but not the best Witbier when others are much more lively and complex.
