Fat Head's
Wits Doctor Belgian Wheat

LOOK: Pours a cloudy, hazed, medium pale yellow color with a white head. Leaves an appropriate level of lace on the shaker pint glass.
SMELL: Wheat, wheat bread, a little meaty as well.
TASTE: Wheat malt, and some of that same meaty, roasted, smoke cured malt note. Clove, faint lemon, and possibly orange peel add more depth to the flavor. Firmly malty, definitely possessing a highly kilned malt flavor. Cracked wheat and little to no hop flavor, just a mild citrusy bitterness.
FEEL: Light to medium bodied, well carbonated and crisp. Smooth
OVERALL: A nice wit with a robust malty presence.

Beer # 11 8/9/13

This wit is a very pale-white gold with lots of haze that grows a good, solid white head. It lasts pretty well and leaves a pretty good amount of lacing on the glass in spotting with some patching also.
Fruit flesh and pear are prominent on the nose, the yeast a little chalky and offering all the elements it should, but lightly.
The pear and banana come through strongly in the flavor, all the Belgian yeast coming through strong on the tongue. Lightly spicy with an herbal note, it plays through the sweetness very nicely and makes for a very balanced, well-rounded taste overall, especially as more fruits come out in the finish.
The body is light, as it should be, verging on medium with a depth to it. It has a nice crispness without dismissing smoothness, which rolls through from beginning to finish.
