Notes/Commercial Description:
"Six is a dark rye beer with layered flavors including chocolate, caramel, pepper, wood, cherry and tropical fruit. It starts semi-dry and smooth and finishes fully dry and tart with a small bite from the hops. The overall balance of the Six makes it easy to pair with richly prepared meats along with many harder cheeses."

Poured from a 750 ml bottle into a Hopside-down pilsner glass.

A: Slightly hazy, medium brown color with over one finger of mocha-tinted foam that diminishes to a persistent residue. Scant lacing remains on the glass.

S: Tannic and slightly roasty, this beer's smell is a musty old puzzle that suggests wood and brettanomyces, phantom phenolics, lactic acid, and molasses.

T: Begins almost dry, with brown malt and lactic tartness that is steady but polite. The middle dries up and cleans up considerably, but then husky roasted grain and funky, herbaceous flavors develop in the finish. Musty wood and rye bread linger on the palate.

M: Thin viscosity, drying and acidic on the palate, with brisk carbonation.

D/O: This beer has plentiful complexity as well as appeal, combining varied elements of dark malt, rye, and wild ale yeast qualities. Musty wood and sugar impurities outmaneuver simplistic cider in a pro-rustic campaign, leaping well over any assumptions or expectations one might bring with them. This is a beer for the jaded palate.

A: Poured from a bottle to a pint glass. Had a dark brown color and a thick consistency. There was a large, tan-colored, foamy, long-lasting head. Very good lacing.

S: A somewhat muted aroma of dark fruit, malt, and chocolate.

T: Tasted of dark fruit (raisins, plums), some malt, light chocolate notes, and a slight funkiness (a bit surprising). At times this flavor seemed okay, but then it seemed thin and watery. It feels unfinished.

M: A well-carbonated beer with a smooth finish. Medium-bodied.

O: This is a very uneven beer. It has some good characteristics, but ultimately falls short.

Pours a murky dark reddish brown with billowing dense khaki colored head. Thick sheet of lace down the glass until the end. Smell: raisin bread, dates, baking spices. Taste: raisin, caramel, soft graininess, moderately spicy, unripe but not tart plum. Medium plus bodied, finished drying and mildly sweet with lingering earthiness. Nice!

Poured from 750mL bottle into a tulip.

Appearance: deep, rich amber-brown with a slight touch of haze and a strong effervescence. Head pours three thick fingers of creamy tan foam. I think it's quite attractive.

Smell: bready malt aroma with a definite rye character: a little spicy and fruity. There is a little cherry here as well as some caramel and toffee. It reminds me a bit of a subtle quadrupel. I like it.

Taste: much like the aroma, with plenty of raisin, cherry and tobacco character. Rye spiciness is definitely there but it doesn't overwhelm anything. This is quite a fine beer.

Mouthfeel: rich body with a huge carbonation yielding a decent creaminess, if a bit rocky. Quite good.

Overall: this beer really appeals to me. I'm very glad I've discovered it.
