750ml bottle poured into a Hill Farmstead wine glass.

The beer pours a slightly hazy golden, copper color, hues of straw and orange with a big, white, soapy head, loosely packed bubbles that has fantastic retention and leaves a nice amount of spotted lace behind. The aroma is heavy on the herb garden, very floral with some yeast qualities behind it and a bit of sweet pale grain at the back end. The flavors are right in line, lots of calendula and yarrow, really brings out the herby and floral character. The yeasty funk is there, very subtly so, nice pale grain that is sweet, but very nicely integrated. The body is nice, carbonation is on the lower end, yet still lively, coats the mouth well, the finish is a touch creamy, yet a bit dry, a little confusing.

Verdict: A nice saison that really highlights the adjuncts. The herby and floral qualities are really front and center, and executed nicely. While it doesn't showcase the yeast and grain as much, they are certainly nice subtle touches. It's not a beer I could drink lots of, but sharing this 750ml bottle was fairly easy. A nice beer from Upright.

A slightly hazy golden in color with 2 full fingers of head which dissipated slowly and left some seems amount of lacing behind.
Aroma is sweet and floral.. Honey, tea leaves, flowers for sure, white pepper, Belgian spicy yeast.
Flavor is mellow and honestly very floral.. Nowhere near as sweet as it smells.. Tasting flower petals, a slight banana mellowness.. But yeah flowers. Medium body with just enough fizz to keep it interesting.
This is probably one of the best tasting saisons I have ever had. My first thought upon smelling "oh great another saison that tastes like a tripel."..... Nope! This is mellow with a dry finish and very very floral.

Beer Temple - Chicago

An easy pour produces a glass filling tarnished copper elixir, literally, considering yarrow has been used for centuries as a cure all. The body is murky but glowing gold at the base of the glass. A perfectly white head grew to three fingers on the pour and while it slowly settled left behind thick sheeting. The foam becomes insanely creamy as it rests.

I'm not 100% sure what either yarrow or calendula smells like on their own but together the aroma leaps from the glass. Let me start off by noting the sugar cookie maltiness, which happens to be far in the background. The flowers and yarrow dominate. Florals and perfume galore though not overpowering. Slightly medicinal. Unique to say the least. It's really like nothing I've ever smelt before but if pressed I would simply state "flowers" generically. I can't keep my nose from the glass out of sheer curiosity.

There's more balance in the flavor department where the core ingredients are more pronounced. The sugar cookie maltiness again lays down a base. A quick flash of orchard fruit runs through and I do mean quick. Big floral notes pick up mid palate from the adjuncts. A solid herbal presence and soft medicinal qualities wash through on the backend. I'm a big fan of this beer mostly because of the unique flower and herb additions.

The body sits firmly between light and moderate. The carbonation is there making this beer soft and slick but it's hardly noticeable, nicely done. If the feel of carbonation isn't noticed, and there's not a problem, I feel it's been done properly. A mild herbal bitterness lingers from, I'm assuming, the yarrow.

Flora Rustica seems, to me, like a beer that would have been brewed a couple centuries ago in the countryside. Tossing into the kettle whatever was available around the farm. There's a uniqueness that makes me recommend this beer to anyone I know. I could see this saison being polarizing but to me it's delicious.

A-hazy golden color with a nice white head and good lacing

S-grainy malt, lemon, floral, pepper, herbal

T-toasted bread, lemon, pepper, floral, light orange, yeasty, hint of sweetness, mild bitter finish

F-medium body with moderate carbonation, crisp and dry

O-flavorful saison, unique floral notes, very enjoyable

A: Initially pours a exceptionally clear golden hue with 3 fingers of off-white head. Delicate amounts of lacing remain along the sides of the glass.

S: Fresh cut leaves and grass with light floral notes of spring flowers and hints of lemon and herbs together with a background of peppery yeast. I grow yarrow flowers and they are heavily evident on the scent.

T: Upfront notes of yeasty bread followed by freshly cut grass, young flower buds, lemon zest and minerals. The yarrow flowers are noticeable. Bone dry and less sweet then I expected from the smell.

M: Medium bodied with moderate carbonation. Bone dry finish.

O: This saison exceptionally captures the freshness in a medicinal herb garden. The fresh leaves, grass and buds shine and are balanced by lemon and mineral notes. Delicate and fresh with the right balance of hops to level out the herbal notes. Another amazing saison by Upright. I much prefer the Rustica without the barrel aging.

Big thanks go out to Rbald42 for sending this bottle to me.

Appearance: Pours out a hazy, warm honey color with about 1.5" of eggshell white head. High levels of carbonation are present in this saison. The head has excellent retention, and very nice lacing as well. Very solid looking beer.

Smell: A bit yeasty, white pepper, spicy florals, a bit of bitter fruit... also detect German hop presence as well. Very harmonious. Nothing truly sticks out above anything else. Smells good, and very complex for a 5.1% ABV brew.

Taste: Malt backbone consists of biscuit dryness. Yeast character and a bit of lush green fruit follows. Tail end is spicy florals and noble hops.

Mouthfeel/Overall: A touch over light bodied with a perfect amount of fine carbonation. Exceptionally smooth drinking. Dry finish. Overall, this is a very enjoyable saison from Upright. Very complex for its size, and very drinkable as well.
