year or so old 750ml bottle into a teku glass.

golden color with a very big saisony type head. smell of lemon and coriander. taste is quite clean and crisp. not that funky... a lot of floral elements to it. slight sugar sweetness here too. quite complex. a tad yeasty as well. finishes with a slight bitterness that works very well. body is light and refreshing. carbonation is medium.

overall true to style and just a well made saison.

A slightly hazy golden in color with 2 full fingers of head which dissipated slowly and left some seems amount of lacing behind.
Aroma is sweet and floral.. Honey, tea leaves, flowers for sure, white pepper, Belgian spicy yeast.
Flavor is mellow and honestly very floral.. Nowhere near as sweet as it smells.. Tasting flower petals, a slight banana mellowness.. But yeah flowers. Medium body with just enough fizz to keep it interesting.
This is probably one of the best tasting saisons I have ever had. My first thought upon smelling "oh great another saison that tastes like a tripel."..... Nope! This is mellow with a dry finish and very very floral.

Beer Temple - Chicago

An easy pour produces a glass filling tarnished copper elixir, literally, considering yarrow has been used for centuries as a cure all. The body is murky but glowing gold at the base of the glass. A perfectly white head grew to three fingers on the pour and while it slowly settled left behind thick sheeting. The foam becomes insanely creamy as it rests.

I'm not 100% sure what either yarrow or calendula smells like on their own but together the aroma leaps from the glass. Let me start off by noting the sugar cookie maltiness, which happens to be far in the background. The flowers and yarrow dominate. Florals and perfume galore though not overpowering. Slightly medicinal. Unique to say the least. It's really like nothing I've ever smelt before but if pressed I would simply state "flowers" generically. I can't keep my nose from the glass out of sheer curiosity.

There's more balance in the flavor department where the core ingredients are more pronounced. The sugar cookie maltiness again lays down a base. A quick flash of orchard fruit runs through and I do mean quick. Big floral notes pick up mid palate from the adjuncts. A solid herbal presence and soft medicinal qualities wash through on the backend. I'm a big fan of this beer mostly because of the unique flower and herb additions.

The body sits firmly between light and moderate. The carbonation is there making this beer soft and slick but it's hardly noticeable, nicely done. If the feel of carbonation isn't noticed, and there's not a problem, I feel it's been done properly. A mild herbal bitterness lingers from, I'm assuming, the yarrow.

Flora Rustica seems, to me, like a beer that would have been brewed a couple centuries ago in the countryside. Tossing into the kettle whatever was available around the farm. There's a uniqueness that makes me recommend this beer to anyone I know. I could see this saison being polarizing but to me it's delicious.

A-hazy golden color with a nice white head and good lacing

S-grainy malt, lemon, floral, pepper, herbal

T-toasted bread, lemon, pepper, floral, light orange, yeasty, hint of sweetness, mild bitter finish

F-medium body with moderate carbonation, crisp and dry

O-flavorful saison, unique floral notes, very enjoyable
