Pours a cloudy golden straw color, with orange hints and a foamy white head. Leaves very little lacing.

Smells like ripe fruits, notably citrus. A bit of tartness as well as some spices. A little musk as well.

Taste is an immediate tartness, not overwhelming, but noticeable. Citrus takes over, and doesn't give in, but allows a little spices to add some flavor. Sweet, but far from cloying.

Very little pucker, with plenty of carbonation and a smooth finish. Medium-light body.

I have had, and thoroughly enjoyed, their pure wit. This beer is on a whole different level. Sweet, tart, and more complex flavors really make this a great beer. Crazy drinkable; the only downside is the very limited release. I'll have try to track down the last bottle...

750 ml bottle poured into snifter.

Pours a pleasant light straw color, very slightly hazy with pure white very fine head. No lacing with the low alcohol.

Smells like a classic saison more than anything. A bit of sour and a bit of barnyard funk with just a hint of dried fruit. Makes your mouth water.

The taste is very smooth, beginning with a delightful sour characteristic reminiscent of dry champagne or cider. The sour mellows into more straw and barnyard funk. Very enjoyable, light and smooth, this beer paired wonderfully with grilled halibut and fingerling potatoes.

The mouthfeel was light and floral. Very effervescent, the low alcohol led to a clean finish that was dry and satisfying.

I only wish I had more of this. My wife is not a beer drinker normally and she had half the bottle. The Sole Composition series from Upright continues to impress.

Hazy yellow-orange, white fluffy head.

Wheaty estery smell. Zesty citrus with maybe a very light toast of french oak? I wish the citrusy part was a little more pronounced.

The wit opened up on the palate as more of a mineral mixed with some slight phenols and yeasty esters. Finished bone dry. A sharp tang from the orange peel started to make it's way forward as I drank more. It became very refreshing. Like drinking Fresca or something (not that it actually tasted like Fresca but there are some similarities). The barrel aging isn't extremely noticeable. Maybe just a hint of a toasted flavor. High drinkability.

Bottle 10 of 60. Served in a cervoise. Pours a cloudy golden-yellow color. Crisp nose. Slight citrus and mild hay. Flavor has a nice dry spice and light acidity. Super crisp. Touch of citrus. Really smooth and easy drinking with just a touch of acidity. Delicious.

Shared by Jason, it's rare.

A - Orangish yellow body with some good haze. Little bit of a white head that faded but left a decent ring and cap.

S - Citrus, brett, funk, some orange. Has a nice amount of tartness in there for a witbier.

T - Some orange, little funk, wood. It's okay, doesn't actually taste a ton like a witbier, but maybe that's because it's in a barrel, which is interesting enough in itself. It's okay, but not great.

M - Lighter bodied, some fairly active carbonation.

O - Interesting beer, but the taste is a little bit bigger than the mouthfeel, which makes this one suffer a little bit. Nothing I'd try to get a hold of again.

Thanks Luke.

Pours a lightly cloudy orange yellow with a tall white head. The aroma is very floral in nature with spices and orange peel. Lots of apples, a light lemon, lactic, and a little bit of oak. The flavor offers plenty of apples, pears, lemon, and lactic notes, too. Some oak, spice, and some wheat bread. Medium bodied with medium to high carbonation.

Thanks to oregonskibum for this bottle!

Like the Pure Wit, this is a light yellow color with no head (or at least no head that lasts longer than a minute or two).

This smells a lot better than the Pure Wit. Tart lemon is replaced with sweet orange, with some tartness still. Some funkiness too.

Sweet orange, tart lemon, and funk in the flavor. Not a brett funk exactly, but it does remind me somewhat of a gueuze. You would probably not identify this as a witbier if you didn't already know. Unique, and very tasty.

Like the Pure Wit, this one lacks some carbonation, but it's not as much of a problem here as this treatment doesn't really taste like a witbier and I'm not left wishing for my carbonation nearly as badly.

A very nice beer, not anything you'd ever expect from a witbier but quite tasty. Too bad there were only 60 bottles produced. Maybe they can make it again and get the carbonation right.

7.7/10

Thanks to Jason for sharing this rarity. Bottle #16/60. Served in a Heady Topper glass.

A - Hazy white peach flesh body. A finger of white foam settles to a thin cap and thicker collar.

S - Funky brett, lactic notes, buttery oak, light lemon, and some wheat in the periphery. Quite nice aroma and thankfully minimal spice.

T - Taste is a little less pleasant. Lemons, wheat, mineral water and oak, and a strange herbal note in the finish.

M - Slightly zesty carbonation, light body, a bit watery.

D - Started out quite promising, but got a bit fatiguing and off-putting by the end. It's an interesting experiment, and if it was a bit thicker that would have helped quite a bit.
