The New School:
"...in the vein of a Lambic style of wild beer though it does not use wheat and of course is not spontaneously fermented. [I]t was fermented entirely in oak barrels [that] were stuffed with fresh peaches from Baird family orchards."

750mL bottle poured into a tulip. Thanks to Jason for the bottle!

(A)- Pours a cloudy golden orange color. Some subtle white froth and lace.

(S)- A really nice dry acidic fruit and oak profile. The peach is subtle, but definitely there. Subtle funk too.

(T)- Very similar to the smell. A really nice dry acidic oak and peach flavor with subtle funk.

(M)- A nice carbonation level and balance. Great fruit and acidic oak characters. Sour and mildly funky, but a great overall feel.

(D)- A great take on the style. Good oak and acidity with fruit. Very well done Upright.

Appearance- Pours up a good amount of head which doesn't have much retention. The head is a pure cotton white while the body is a hazy, pale amber to straw color that shows some golden and lemon hints in the light. Leaves no lacing behind.

Nose- Fairly subtle- I wonder if the peaches may have already faded. There is a smooth and rounded peach aroma but it isn't as strong as I would have expected. Acetic acid, vinegar, and a slight tartness. Some straw and a tiny amount of funk. Swirling shows a brighter peach note.

Taste- Shows peach right on the front which seems a little green. There also seems to be a bit of saltiness which I didn't expect but works well as the middle shows minor notes of straw and funk which proceed into a rounder and fleshier peach finish. I am surprised by the tame nature of the acetic acid. It's there but it does not induce puckering and I should be able to drink this pretty easily. That's probably not what a hardcore sour fan would want to hear but I'm quite alright with it. Not as complex as many sours but still maintains good presence with a wonderful sublimity which comes from the excellent balance and integration. This beer doesn't hit you over the head but it is to be enjoyed for its refined character. The nice dry finish with vibrant fruit makes this seem like a good candidate for a white wine drinker. I don't know where the saltiness comes from but it enriches this beer more than any other note and works well with the slight notes of straw and funk. Almost reminds me of the sea to a certain extent. A really good to great beer but closer to really good. Some spice, think coriander and white pepper. Some citrus notes of orange and lemon as well.

Mouthfeel- A little more than light bodied with some carbonation that has a little bit of effervescence and a little bit of a tingle. Dry finish really ties the flavor profile together.

Drinkability- Fairly accessible for a sour and one that I would offer up to a novice if it weren't so expensive. Pretty easy drinking. I might not buy this again to drink but I'm sure I will buy more next year for trades.

Overall- Really good to great beer but closer to really good. Not as much presence as many of the beers in its style but still very enjoyable. I don't think it lives up to the hype that creates lines but I do understand the appreciation for this beer. Definitely worth a try and I would give it another go if I saw it on tap. But I would not pay 20 bucks for a bottle for myself.
