A barrel fermented beer using fresh peaches from Baird Family Orchards. The Fantasia is firmly tart and hugely aromatic with a character not unlike Belgian fruit lambics. Minimum one year on oak before an extended bottle conditioning prior to release.

Big thanks to oregonskibum for yet another gem from the PNW I have been privileged to enjoy thanks to his generosity and taste,

A cloudy, dark straw pour is topped briefly by a finger of white foam that relaxes to a nice skim and big bubbled ring. Nice.

Citrus and earth, yeasty, fruity tart, light hormonal, neutral sweet, and lightest hint of grain in the sweet to make an aroma that beckons my lips like honey bees to clover.

To me, the keys to a wild ale's greatness are the sour to accompany the brett, and the flavors of the brett, This has sour that is marvelously not vinegary, perfectly tart to wake the taste buds to the other flavors that accompany. Here those flavors are amazing. Citrus that is neither too lemony nor sour, grain sweet that is just there enough to highlight, earthiness that doesn't get down into the dirt, and a light, hint of hormonal funk that doesn't overpower. Lightest peach notes, and even lighter oaky hints come out more as it warms. In short, this is the finest wild ale I have tasted, and not to give this a 5 for taste would be criminal. I don't think American Wilds can hit it closer to perfection than this.

Mouthfeel is spritzy and light, coating while staying clean and bright, with a finish that is excellent.

One off the finest Wild Ales, perhaps the best. Refreshing and stunningly delicious. Get this if you can, it will not disappoint.

A - Light golden orange with a haze. Small white head to it

S - Sweet juicy peaches. Light tartness and lactic acid

T - Peach up front, sour tartness and a light funk that gives it some blue cheese /farmhouse

M - Light carbonation and lighter body. Slight funkiness that lingers on in the finish

O - Solid peach beer but not as much as I'd like. Lighter sour presence as well. Would have liked to have a bit more peach and tartness
