Notes/Commercial Description:
The Apricot Seven is a blend of two oak barrels soured from Artisanal Wine Cellars. Both were treated identically, being filled with a batch of Seven in early January 2011 along with Oregon apricot puree and a bit of brettanomyces. After eleven months, the two were blended and have been sneaking out here and there in draft form, while this ten case release was saved until now. At this point the beer has a significant earthy and fruity quality with distinct tartness rooted in both apricot and brettanomyces fermentation byproducts. Perfectly suited for fans of funky and sour ales, this one is just fine now but can be cellared for several years for more pronounced wine-like flavor to emerge.

Served from 750 bottle into snifter glasses.

A: Slightly burned orange, fairly clear. Medium head.

S: Apricots - not quite sure if it's closer to fresh apricots or preserves. In any case, it smells great.

T: Sourness balanced by hops and apricot flavor. Quite lovely.

M: Medium body. Carbonation seems to be on the low end, which is just fine for an acidic beer.

O: Apricots go quite well with the base beer. Very nice.

Can't remember who shared this one. Kan? Bottle #102/120. Served in a Cantillon tulip.

A - White foam settles to a thin cap, leaving behind tiny specks of lace. Slightly hazy pale golden body.

S - Apricot, sweet tarts, a hint of acetone, fuzzy peach candy, a bit of vinous oak, some of the sweet and fruity base malt and yeast flavors. This one doesn't seem super 'wild' relative to other Upright offerings I've had; only a bit of tropical brett clausenii funk.

T - The taste is heavier on the malt character of Seven, with pale malts dominating, along with some fruity esters and light stone fruit. Apricot addition is more subdued, and brett and barrel only show up late, imparting light vinous tartness and acidity.

M - Medium body, with pleasant soft, lower carbonation. Dry and tannic from both fruit and wood. Alcohol is masterfully hidden; would never have guessed 8.4%.

D - Other than the light acetone note in the aroma this was a nice funky, fruity Saison. I could have stood for a bit more fruit and barrel character, but it was still eminently drinkable.

Opened at 4/20 tasting.

Very bright orange-yellow (apricot??) color, pretty nice off-white head.

Decent amount of apricot in the nose, some berries or other fruit, brett and mild funk, a little sourness.

Tastes different, some sweet fruit but not a very specifically apricot character, hint of brett, light tartness but not terribly sour, finishes fruity but dry and grainy.

Mouthfeel is pretty thick, syrupy, not enough carb but no hint of booze.

7.5/10

Another silky creamy wonderful apricot beer. Pretty similar to the last batch. Blind, I wouldn't be able to tell them apart, but are fantastic.

Big thanks to GT for sharing this bottle. Bottle 146/149(!)

It pours a nice orange hazy color, very pretty. Has some white foamy lacing and a ring of head that hangs around as well.

The smell has plenty of fresh apricot, it's really juicy and aromatic. Beneath the fruit is a layer of straw malt and just a wisp of yeast funk, and some confectionary notes from the oak barrel.

The taste is very fruit forward and juicy as I noticed earlier in the nose! Very unique, almost seems like a lambic without the sour, but it isn't sweet or cloying at all. Has a nice oak note and seemingly like a almond extract sort of flavor as well. Definitely has a nice funky flavor too, but it seems sort of second fiddle to the fruit, a really nice flavor.

The feel is in the pocket , silky good level of carbonation.

A very refined and tasty beer, excellent stuff.
