Light-medium straw with a fluffy bright white thick head. Large bubble set in the head, but still has medium retention. Very slight chill haze.
Carbonation pushes the nose forward: hawaiian sweet bread, coriander, celery seed, lemon zest, muscat grapes, ranier cherries, sandal wood, nutmeg. It all feels relatively subtle on the nose, but everytime you go back, there is something different. A beer for one who likes to reflect.
Light orange and grapefruit zest are chased by Cream of Wheat, banana, marzipan, fruitiness from the yeast, leavened bread dough, and a metallic edge.
The mouthfeel is medium bodied and a little on the fizzy side, which pushes the alcohol front and center. There is a slickness in the mid-palate. The beer finishes on the backend with some dank bitterness.
Really a nice beer that would be amazing with both less carbonation and a finer perle. Really love the complexity in the nose, but it gets just a little lost on the palate.
