The starting head is thick and frothy, although there is little lace. Later, the pour produces a large-bubbled head. Plenty of white yeast in the liquid. Yellow-white in color and so cloudy you cannot see through the edge.
Big nose on this beer, I smelled this brew as soon as I opened the bottle. Once poured, I pick up faint iron aroma. The main smell is of very pale malt and floral hops.
This tastes like a really good homebrew--I think it's from the plentiful yeast on the tongue. Outside of this, this beer follows the traditional IPA flavors (I don't note a strong alcohol presence). Decent body and neutral carbonation.

This is my first purchase from Whit Birch and I believe I got a bad bottle. When I opened the cap, there was a rust colored residue on the opening of the bottle. Tasted off to me, almost like someone concocted a tea of sour lawn mower clippings. Will not try again regardless of if this is how the beer is supposed to taste or not. I'll stick with 90 minute Dogfish Head for my dry hopped dipa...

Look: Light golden, leaning towards straw, in color. Hazy; opaque. Pours with a large 3+ finger off-white head that dies down gradually leaving a thin, uneven layer of foam on the surface of the beer and patches of sticky lacing on the sides of the glass. Lots of small bubbles visible rising to the surface.
Smell: Malt, grass and mild hops.
Taste: Tastes like it smells, only richer. Starts off with malt and grass, progresses to a mild hoppy flavor and ends with a somewhat dry and bitter finish.
Feel: Medium body; very slight fizz from the mild carbonation; mild dry finish.
Overall: Dry-hopped flavor, as described on the label. Different DIPA due to the unique dry-hopped flavor. Generally I am not a fan of the dry sensation, however this beer is right on the edge of being too dry without actually being too dry - making it still somewhat refreshing. Decent for what it is, but not really something I would purchase again due to personal preference.

I'm a big fan of White Birch Brewing but it is not my favorite brewery, but I really look forward to there DIPA offerings when super fresh. The yeast used is super distinctive and tastes very unique. I poured the 6th anniversary ale into a large glass, the last bit had several plops and heavy resin, classic white birch DIPA. The color looks like juiced oranges. Not your average DIPA the yeast is the strongest taste and longest lasting taste on my pallet. Try this beer with cheerios.

I at first had to double check if this wasn't a wheat beer by its initial taste.
Taste like a lighter beer then kicks in.
9.5 is incredibly hidden.

Didn't get a chance to try this until 7/30 and bought the bottle at Bert's in Hooksett. I was more than surprised by the juice pour appearance. The taste followed not a real juicy DIPA but bursting with lots of flavor. There is still a malty nose but a much better hop balance in the end. A great local DIPA. Job well done Bill!

Bottle from the Drinkery Derry
Pours a slightly hazy golden lemon color with a decent sized long lasting creamy white head. Aromas of bready malt with plenty of citrus and pine to go around with hints of peach and a light Belgian yeasty phenol. Bready and light caramel maltiness with some citrus hop flavor to counter. Light to moderate hop bitterness. 9.5 % is well hidden. Tasty beer, but I'm not getting double IPA out of it.

Pours a murky orange color with a tall, pure-white head. This literally looks like orange juice.
The smell is sweet, with hints of orange, mango and pineapple.
The taste follows the nose, and is very much a citrus-forward DIPA. Lots of orange and mango, as well as some melon with a faint, piney taste on the end.
The mouthfeel is light-bodied with heavy carbonation. There is a slight alcohol burn with each sip.
Overall this is a very solid DIPA. I didn't expect much with this but I was pleasantly surprised. It's definitely not a bitter DIPA but it isn't overly sweet either. Definitely a beer I'd try again.
