(4.0) A: Deep dark bronze with a stark white semi-creamy foam head. A steady retention with a streaky lacing.

(3.5) S: Fresh cut grasses, unripe orchard fruits, mellow spices, belgian yeast, and a touch of balsamic. Good complexity with varying aromas that combine for a pleasing aroma.

(4.0) T: Herbal and grassy, honey, cloves, apricot, pear, and a lighter malt backbone. Dry and bitter with a delicious fresh grains taste. Faint tropical fruit elements. A touch of balsamic/wine qualities on the backend. Good balance in the dry and bitter departments.

(4.0) M: Medium bodied with a lower carbonation. Smooth and oily textured. Appropriate.

(3.5) D: Very drinkable and satisfying saison that features complexity and a wonderful taste profile.

From the bottle dated October 2011, Batch One, #1320. Sampled on August 27, 2012.

This may have been retired but I got my hands on a 10-month old aged bottle. It pours a cloudy golden-copper with a a volcanic off-white head that bubbles away slowly to a ring.

The citrus, lemon zest kicks in first on the nose followed quickly by yeast, spice, and earthy malts.

The body is medium and a little chewy.

The citrus zest is downplayed in the taste in favor of the candied Belgian sugars and a long earthy bitterness at the end. This and about a case of bottles was aged about 10 months in the brewery but not on purpose. But I am the winner in the end able to enjoy a well-matured Blonde ale.

Bottle dated October 2011. Poured into a pint glass. Darker than expected orange colored body. Nice white head. Smell had nice aromas of brown sugar and cinnamon. Flavor was pleasing. Tangy and spicy, but sweet on the finish. Mouthfeel was on the thick side for a saison. I would have liked it more if it was a tad smoother. The 6.8 abv was hidden well. A good refreshing beer and easy to drink, but just a bit on the simple side.

Thanks Mike. Beer is served in a snifter. Beer is yellow, mostly clear, aggressively carbonated, looks nice. Soapy white head, mostly large bubbles, some lacing.

Beer's aroma is all yeast, mildly fruity.

Beer is decent but not great, it is fruity, effervescent, sweet, mildly dry on the finish. I don't get a lot of "saison" from it but not horrible by a long shot.

Part of Blind BIF 6. Thanks to Brez07. Served in a SAVOR wine glass.

Pours a light copper-caramel color with a thin white head. Good retention and some spotty lacing. The nose carries a faint bit of malt and light bread. Malt forward. Flavor has that same malt character but has a bit of fruitiness and a fairly-heavy yeastiness. Belgian character from the yeast, though it's a bit light. Medium body. Fairly-heavy carbonation. Decent, but not great.

Bottled Oct 2011 batch1
Pours a deep golden bordering on amber color with a huge fluffy white head that persists quite well. Smells malty and fruity with a hint of yeasty funk. Crisp aroma of pilsen malt intertwined with citric hops and a bit of tart. Taste is light, smooth and refreshing. Sweet bready malty taste with light pomme fruits a bit of candy sweetness and a grounding wheat-y yeasty taste. Sweet and tart apple like flavor lingers long after every sip. Medium body with a spirited level of carbonation and a sweet slick mouthfeel. Decent simple straightforward brew. Seems like it would make a great lawnmower beer.

22oz, bottled in Oct. 2011.

Nice reddish amber with a decent creamy head. Some lacing, good retention. Blonde? More like strawberry blonde.

The aroma is decidedly tart and funky, with some citrusy hops. Toasted malt comes through as well. Complex and enticing.

The flavor is dry and yeasty, with some interesting phenolics bordering on burnt rubber. Really nice funk going on, and a pleasant level of acidity. Almost astringent in its bitterness and dryness. Good body and toasted malt weight. Carbonation is medium. Some medicinal flavors on the finish I'm not wild about, slightly vegetal as well.

Nice and dry, but a bit off in the flavor department. Interesting though, and by all means a decent beer. I'll have to try some more White Birch stuff in the future.

Batch one, 1320 bottles made, bottled October, 2011.

Pours a light fizzy head that fades semi quickly, over semi clear orange-red almost rosy colored beer.

Nose has Belgian golden malts, a bit of reddish malt too, light grassy herbal floral fruity hops, a bit phenolic too with a slight paint thinner aroma, some fruity esters almost as if it was 9-10%abv not less than 7. Creamy malts and light Belgian yeast finish off the nose.

Taste starts with Belgian malts again, also some Belgian yeast and gets a bit of a yeasty taste, sweet golden malts, and a bit creamy. Then herbal grassy fruity hops, with a hint of bitterness at first, and some fruity yeasty esters. More fruits, light apple and apricot. And then a bit of grainy malts, and a bit of Belgian yeast with a light farmhouse rustic saison like yeast flavor. Finish brings more sweet malts, and hops start to kick in with more bitterness, chewy almost spicy hops, and slight almost astringent or salty like tannic hop kick, and light malty flavors lingering.

Mouth is med bodied, decent carb

Overall not bad, interesting, but some off aromas, and hops get a bit weird on the finish. Drinkable, but not Bill's best.
