A - Poured a nice tan/orange/brown color with a huge off-white head that climbed up the glass and stuck around forever. The very definition of retention. Extremely intrigued considering the hype surrounding this beer.
S - Deep and complex with a lot of fruit present. Some apricots and figs, definitely some spice; I'm getting some slight cherry as well, also perhaps some sugar/caramel.
T - A carnival ride of flavors. Just jaw droppingly good. You get a heavy dose of the fruit right off the bat as well as an earthy/lightly smoky element with a unique belgian yeast flavor. Perhaps even some vanilla/tobacco/bubblegum/chocolate going on in here? My mouth's head is spinning. This beer is SO good. Only gets better as it warms as the flavors become more prominent, in here I start to notice some apples/pears as well. **NOTE: This only continues for so long, once it hits near room temperature it becomes somewhat bland. Definitely want to drink this cool, no harm in letting it warm, but don't want it to quite get around 65-70 degrees, then it loses it's flavor somewhat.
M - This has a light to medium body to it, great carbonation that makes it pleasantly harsh upon the tongue but only serves to increase the conveyance of flavor. Very smooth overall, you don't even notice the ABV, and still you get the alcoholic warmth with this one right with the first sip.
D - Very drinkable, even given it's high ABV, I feel like I could take down a pile of these but I wouldn't want to. These need to be cherished. Each and every one.
O - Just wow. Everything I had hoped for and way more. Maybe even the best belgian I've had yet. YUM!!!

Poured into a Chimay chalice. Medium copper color with an initial high carbonation and a two-finger cream-colored head. Smooth malts with hints of dried fruit and banana. Exceptional for my first try from this brewery.

L: Clear medium brown, 2 finger foamy off-white head, foam has good retention and leaves good lace.

F: Medium body with high carbonation, crisp and frothy but it becomes more creamy as the carbonation off-gases.
O: Great Strong Ale.

Gently dark, pecan color. Dubbel-like chestnut smell. Light head. Cocoa bean flavor. Pervasive but light effervescence. Very approachable for a Belgian strong dark.

clove and tobacco. richest brown color, opaque, with a touch of micro foam at the rim. bourbon finish on the nose. the feel is perfect. it starts out a little dense and thick, then suds gently and lightens up.

Wow--been working my way through Belgian Ales--only drinking 90+ here on Beer Advocate--this one was exceptional--really enjoyed it--excellent Trappist Ale!
