I had the Rochefort 8 in my snifter at cellar temperature, as is proper.
A really, reeeaaaally hazy shade of reddish brown, with a massive three to four-finger off-white head. Looks nice.
Smells LIKE ripe fruit, not just similar. Maybe bananas, apples, and pears? A bit of a boozy brandy aroma, too. It also literally smells like earth. Rich, loamy, organic earth. Ancient earth. Kinda musty, in a good way.
The taste fulfills the scent's tantalizing temptation terrifically. It adds to this sweet Belgian yeastiness and a pronounced, slightly bitter hoppiness that leaps out more than in most Belgian ales I've tried. A wholesome, earthy hoppiness which grants balance to this fine ale.
It feels Belgian, what with its lively carbonation and deceitful drinkability.
