Big head dissipates to a steady layer with a swirl of dark yeastiness. Cloudy, turbid mahogany, with sediment floating around-- maybe I screwed up the pour. Aroma of yeast, alcohol, and fruity sweetness.
Layers of complex flavor. At first it's medicinal, hoppy, and bitter. Then there's a phenolic, rubbery and yeasty flavor on the tongue. After a few sips, the taste buds adjust and it's beautifully balanced. Alcohol is well-hidden. Lots of buttery maltiness, some dark fruit flavors too. Finish is astonishingly dry and clean. This amazing flavor profile is unique to Rochefort. Fine-texture carbonation. Mouthfeel is creamy but surprisingly lithe and bright on the tongue. Insanely drinkable for a strong belgian ale.
Delicious, unique. Easily the hoppiest of the three Rocheforts.
