Dark brown body, beautiful white head. The smell is super sweet. Loads of raisins, plums, and dried black cherries. No yeast (thank god). I really dig the booze laden sweetened cherries that just dominate the nose.

Now the taste rivals and compares to Westvleteren 8. Light body, but very sweet. Mostly those cherries and just a bit more dark fruits. Slight hint of all that booze come late, but in a great way. Yeast and bubbles make it feel effervescent, and make the flavors pop on the tongue.

A: Dark-brown coloured, almost no light shining through, big cream-white head that is turning into a thin head that stays until the last sip

S: Sweet, slightly fruity, a little bit of malt

T: Very sweet, lots of fruit, minimal malt, almost no hoppy bitterness

M: Thick and heavy feeling in the mouth, medium carbonation, not too much, but not feeling flat.

O: This is a very nice, fruity and sweet beer, heavy feeling in the mouth, intense flavours hide the alcohol, probably my favourite of the 6, 8 and 10 of the Trappistes Rochefort beers due to its good drinkability. I like it as a beer after a good meal, or paired with a dessert.

Bottled 08/16/11.

Dark mahogany pour into my St. Bernardus goblet with a lush, inch-thick tan head. Decanted well, with a half-an-inch of beer left in the bottle.

Dusky and spicy yeast, fusel alcohol, prune juice, cinnamon, clove, fried banana, dark chocolate, roasted grain, and vanilla extract. Very complex nose.

Plummy dark fruits with loads of cakey yeast. Lighter spice notes flavor-wise (cinnamon, clove, caraway); bolder spiciness from the booze. Black cherry and plaintain. Chocolate and light vanilla. Hint of tartness in the finish. No hops to speak of.

Creamy and full. Highly effervescent, and somewhat coarsely carbonated, to boot. Velvety feel, overall.

An incredible-smelling beer. One of those beers that amazes you in what beer can be. The 8 is exceptionally good, but I look forward to re-visiting the 10.

330 to tulip, cool. No idea how old.

A - 3.5 - Medium translucent cloudy brown, or as someone below aptly put it, mahogany. Fizzy off-white head that dissipates to a thin broken cap quickly.

S - 3.5 - Somewhat faint, malty, light fruity candi

T - 3.75 - Malty, caramel, dark fruits, a little spice. I get something like apple cider.

M - 3.0 - Medium bodied but really carbonated, so seems lighter. Finishes slightly dry.

O - 3.5 - After Westmalle, this is the second of the big name Belgian dubbels to disappoint. I loved Rochefort 6 and am looking forward to Rochefort 10 so I was hoping for a clean sweep, but it was not to be. Like Westmalle, it's got some good flavors, but also like Westmalle, it feels like it had its butt removed. There's no substance to anchor it. The flavors fleet along the topside and don't sink in. It's thin and fizzy. The flavors are there but faint. I'd like to boil this down until it was more concentrated and then try it again. It's like a sauce that's too thin. My face is pleasantly warm afterwards, which is nice, but I would not buy this again.

Had this one after a nice Indian meal. Got this one in my Christmas stocking. Excited about this one. Heard good things.

Nice mahogany pour. One finger head, that subsequently never goes away. Very effervescent. That s the Trappist yeast.

Smell is of dark fruit. Strangely like a Dr. Pepper. Couldn't place it at first. Very rich

Tastes of black cherries, caramel. Has a slight bitter finish. Slightly sour.

Very spritzy. Thin. Boozy. Not sure here. Was expecting creamy touch to this one.

.

I know the reputation this beer has. I wouldn't say that this would be a favourite. Was thrown by the thin body, or maybe the carbonation. Almost over carbonated. Just my opinion but I think that this one is a bit overrated. Good, not great. Not a touch on Chimay Red

Poured from a 12 oz bottle 070715 exp date

A: Pours a dark ruby brown colour. Minimal off-white head that dissipates quickly with no lacing. With second pour, dark black yeast sediment settles in the bottom of the glass

S: Deep, toasty malt. Caramel with a bit of molasses. Smells mildly of white wine grapes.

T: Deep and toasted flavour. Fig/Plum taste is prominent. Tastes like a fruity quadrupel. Banana, strawberry flavour is lightly apparent. Grape and caramel, almost candy notes.

M: Booziness is apparent. Fairly smooth, but warming and fairly spicy.

Overall: Was perhaps a bit congested while sipping this, so didn't get overall amazing experience. Still, when I swished it around in my mouth a bit I was able to get some of the deeper, more complex flavours, and that made the drinking experience great, instead of good.
