Poured into a Trappistes Rochefort glass. Bottled on 1/2013(if I remember correctly)
A-Straight brown, with a hint of mahogany, and a touch of orange. The head(2 inches thick) was latte like: creamy, tan, white, and the yeast from the bottom of the bottle stuck to the top of the foam, which made it look like cinnamon swirl. Retention was great. A little lace left on the glass.
S-Not a lot going on. I could smell a hint of clove and prunes. Perhaps a little malt. This was the weakest aspect about this beer.
T-This fine Belgium ale tasted like prunes, raisins, bananas, cloves, spices, sweet malt, and brown bread. The aftertaste was slightly sweet from the malt and a little spicy from the hops. As it warmed, there was a taste of caramel malt and a hint of brown sugared banana bread. The cloves and spice didn't cover the alcohol taste. It was definitely apparent throughout consumption. This was a pretty solid Trappist ale.
M-Full-bodied, carbonation on the lower side. It was quite smooth and I am sure it would become better with age. Pretty balanced.
Overall, I enjoyed this beer with some salty peanuts and fresh kettle corn. I would buy this again. I just would have liked more aroma. Cheers to the monks!
