(A) An amber to almost a brown in color that was incedibly hazy. 1cm head that held through out the beer. Small amounts or yeast floating in this one.
(S) Semi- sweet with oak and earthy undertones. Tough to put a true nose on this one.
(T) Surprisingly malty and slightly crisp. Can pick up a slight roasted malt flavor that hits the back part of the palate. Overall mild in flavor and very unique.
(M) Light and almost felt flat on the tongue.
(D) Very drinkable! Mild flavor makes for a great sesson beer that is if price is not an option.

Served fairly cold into a wine glass, at the hotel after picking up a bottle last night. 330 ml bottle.
Appearance - nice coppery brown color in the light. A large two finger head is poured and subsides fairly quickly into some wispy foam. Plenty of sediment in the glass too.
Smell - lots of cherries melded in with Christmas baking, also a signature Rochefort smell, that's hard to describe, but the 10 has it as well. I Can smell that this is a boozy beer too. Some other dark fruits for good measure.
Taste - the cherries come through here again with some other dark fruit, maybe plums. Spicy taste at the end of the sip although the aftertaste doesn't last long. A bit of a soda-ish quality to it to in that the flavour just evaporates out of your mouth. The heat is a little more than I'd enjoy out of a dubbel.
Mouthfeel - spicy, finishes boozy and well carbonated throughout. Drier than expected finish. The alcohol has an incredible warming effect in the back of throat. Different than I was expecting but not unpleasant.
Overall - very good dubbel with absolutely wonderful aromatics. The rest of the beer was a bit of a letdown, but that's only when comparing with the magical 10 and 8. Still one of the best dubbels on the market and a must try for Belgian lovers.
