A - Completely opaque, dark, lovely. Surprisingly high head (~3 fingers) from a gentle pour. Beautiful lacing on the side of the glass. Head fades relatively quickly.
S - Not overpowering or forward. A little alcohol through the nose, fruits (but not citrus). Sweet. *Update* As the beer warms, more of the fruit smell comes through; definitely prunes and dates.
T - Complex. The alcohol present in the smell is not at all noticeable in the flavor. Dark fruit, prunes and/or raisins, malty, and sweet. Each sip gives me some other flavor coming forward, but it's all very balanced. Not at all hoppy or bright until the finish (back of the tongue and throat, not back of the bottle). What bitterness there is, is quite different from the bitterness of a PA (think coffee, not pine). Very smooth; smoothest dubbel I've ever tried.
M - Maybe the best overall mouthfeel of any beer I've had. Thick but not syrupy, coating the mouth; lingering taste but no poor aftertaste; just enough carbonation to tingle your mouth, but not so much that you can't leave it in there a while without the flavor degrading. Absolutely lovely.
O - I don't quite favor this over Westmalle's tripel, but that's based on the flavor profile, not the quality. This beer is fantastic, and easily my (new) favorite dubbel.
Bottled October 13, 2011 => aged a year and a half.
