Hazy golden apricot draft pour with white head. Funky and tart nose and first sip. Sweet and spicy finish. Quite nice.

Thanks to moose3285 who sent this, along with the delicious base version, & I’ve allowed this one to languish in the fridge forever. No longer. 750ML bottle split with my wife, who’s not keen on saisons. Or brett. I won’t tell her what it is.

The pour is one beat off the color of a yellow M&M, just less yellow #5 vibrancy. Carbonation is low enough for me to notice. The nose brings a house of dry brett, wild honey, pepper, & a lot of lemon. Nose is more complex than a lot of beers taste.

Saison du Swamp with Brettanomyces is my kind of saison – not, you know, dry-hump boring. The nose tees up what the taste drives: lots of lemon, & the brett gives it an air of desperate dryness. Underneath is a nice peppery whisper, sweetness that I’m going to attribute to bee poo, rough graininess. Light hay, citrus, on the end & just a long sand slide of drying. This is no sipping saison, this is a saison that should be served in 40s. Despite the low carbonation, it’s making belch in my belly.

The extreme drying quality is really the only component of the brett that comes to the surface here – or perhaps after a recent close encounter with Seizon Bretta, perhaps my brett palate is shot. A very good beer with some nice levels of tastiness.

750ml into a tulip. The brew appears a clear golden yellow color with a solid white froth. Some patchy lace sticks to the glass as the cap fades.

The smells includes plenty of tropical brett notes that gets dry and yeasty with spice like pepper and some bready grain. There is an herbal element before getting faintly cheesy across the back like footy pils/sulfur.

The taste is dry and spicy with a lot of brett earthiness and pepper/straw grain aspects. Some herbal bitterness and a fruity complexity like pineapple blending to more tropics then apple and pear skins.

This is a light bodied brew with moderate spritzy carbonation. It is super dry, crisp and crushable. The awesomeness of this brew is in the simplicity and subtlety yet amazing drinkability factor. I would crush this regularly if given the opportunity to have it on hand at all times. Great stuff right here.
