330ml bottle poured into a goblet by freshness date.

A:
Slight hazy gold straw in color with wee white head that simultaneously collapses to just some bubbles on the surface without lace, carbonation seems to be high.

S:
Obviously winy in the aroma it’s reminiscent of dark grapes. Malt sweetness, honey, candy sugar, phenol and some spice also add in.

T:
Fruitiness reminds me of grapes and raisins, sweetness from malt, candy sugar, vanilla, honey and alcohol, again alcohol also adds some spice along with phenol from yeast strain. Charred nuttiness, slight toasted trait and hop yield a slight bitterness trying to balance and cut the edge of sweetness and booze.

M:
Full-bodied, smooth mouthfeel with a bit syrupy body, good crisp with lively carbonation, finish is dry.

O:
Such an extreme Triple with bold aroma, flavor, body yet also alcohol lurking.

One of my favorite Belgian breweries. High carbonation, medium to low head. Nice amber color. Smells like bread, nuts, caramel and a tiny floral. It has some noticeable alcohol aroma. They don’t hide the strong taste of alcohol. At room temp the alcohol is even more noticeable and with a flat head. I still prefer the Rouge and the Cuvee the Chateau

330ml bottle, poured into La Chouffe tulip. A: Pale
golden, clear, small head, faded fairly quickly,
looked very lively, very bubbly throughout. S:
Yeast, esters, apple, some booze. T: Yeasty, fruity
esters, bittersweet, hint of apple, did a reasonable
job of hiding the booze. M: Crisp, well carbonated,
light body for the high abv. O: Thumbs up from
me on this one, not bursting with diverse flavors
but its what I’d like a tripel to be.

Bottle, best before May 2016. Been in the fridge for 6 months or so. Poured into a snifter (I usually always pour my Belgians into a goblet, but having had a few of these, I feel that at 11%, the snifter benefits this ale)

A - bright orange, with a finger of bright white head. Look very clear.

S - this is an odd smelling beer. Honey, apple,a touch of cinnamon, tons of alcohol. This beer has a strange floral scent, with a white wine type scent as well. Very odd.

T - alcohol right off the bat, followed by a honey and finishing with a white pepper. Slight hints of banana. Maybe even some coriander.

F - smooth, creamy and syrupy

O - this beer in very, very unique. It's unlike an triple that I've ever had...more than that,it's unlike any beer I've ever had. The honey notes, combined with the spicy finish, are odd, but weirdly do work. I would suggest pairing this beer with some like a Chinese honey chilli chicken, some sort of sweet and sour dish. I give this beer a 4 overall, for being a very enjoyable and unique experience. A must try for Belgian beer geeks like myself.

Date bottled: 10/23/12. Date reviewed: 5/4/14.

Appearance 4.0: Pours out a beautiful, shimmering golden color. Huge, inch-high head faded into some attractive swirling. Decent lacing.

Smell 4.0: Very nice bouquet. Somewhat subdued, but the hints of honey, mustiness and wood rosins make it stand out.

Taste 4.0: Front is flat, with slight hints of wood rosins near the front of the palate. Middle is dry with light notes of wood and candy sugar (without any hint of sweetness). Finish is bone dry with hints of sugars, rosins and a slight acetone taste. Aftertaste is short and features a brief hint of the malt that -must have-- gone into this beer but is now long gone. Smooth and balanced at every taste level and no hint of any alcohol.

Mouthfeel 3.75: A bit too bubbly for me, but nothing distractive.

Overall 4.0: The most unusual triple I have ever tasted. I would dare anyone to try this beer blindfolded and tell me it is actually a beer. Everything that makes a beer a beer is gone from this brew's flavor profile: no malt and no hops. Still, what is here is like alchemy: lead into gold a brief foray into the magical. This beer is strange; it grows on you and if you are a home-brewer like me, you wonder what kind of yeast cleared this out of sugars like this, what kind of wood is that I taste...not the best triple I have ever had, but surely the most interesting and challenging to the style. Recommended.
