Stubby 11.2 oz bottle picked up at Brewer's Haven.. Bottled on 5/29/13... Enjoyed about 21 months later from a large bulb goblet.. 1 finger head rises up and dies back pretty quickly leaving no lacing and no real cap.. the brew is deep dark walnut.

Thick malty nose leans heavily on the dark raisins.. boozy with warmth, burns the eyes a bit.. Spicy yeasty phenols make me think clove first and pepper second.. Esters are raisin with dark cherries.. a bit of oxidation.

Flavor is hot and a little thin, the beer drops off the tongue quickly.. leaving fizzy raisin alcohol.. Okay.. The carbonation scrubs the flavor very fast, but if you try, there is some fruity esters and plenty of spicy phenols..

Very burpy.. Sharp alcohol... Seems a pretty big mess at this point IMO.

Pours a cloudy, brown. 1/6 inch head of an off-white color. Poor lacing and poor retention. Smells of alcohol, sweet malt, hint of roasted malt, and yeast. Fits the style of a Quadruple. Mouth feel is sharp and crisp, with an average carbonation level. There is also a high level of astringency. Tastes of alcohol, sweet malt, hint of roasted malt, strong yeast, hint of toffee, and slight metallic. Overall, poor appearance, and the astringency and metallic notes are unpleasant. (488 characters)

Poured from 750mL corked & caged bottle into a tulip. This is the 2010 cuvée.

Appearance: dark brown with ruby highlights when held up to the light. Body seems to be haze-free with a moderate effervescence. Head is a finger of fizzy tan foam which subsides relatively quickly. Not too bad.

Smell: sweet malt with a very big raisin component, backed up by a nice pear and date bouquet. Not dramatically complex for the style, but I really like the composition. Mmmm.

Taste: very much like the aroma, with an emphasis on raisin, date and pear; there's also a pretty strong alcohol component here, which I suppose is not surprising. Quite a bit of sweetness features here, but that's acceptable for the style and works with the darker fruits.

Mouthfeel: medium body with a good level of carbonation and a good creaminess. Satisfying enough for me, although for a big Belgian quad I expect a whole lot. Still, quite good indeed.

Overall: this beer is a bit on the hot side, at least in the aftertaste, but I like the dark fruit composition. Beers of this style don't have to work too hard to be pretty tasty to me; still, this guy is worth a shot if you like the style. (1,171 characters)

A - Very dark brown/eggplant skin body. No head or lacing present.

S - Aromas of tangy fruit with some acidity and tartness.

T - Evaporating alcohol up front, with mild hop notes and bitter fruit skin. A slight malt sweetness in the background keeps the balance. Nice spice notes.

M - A mild medium body with a smooth finish. The alcohol warms the mouth and evaporates into the roof of the mouth and sinuses.

From the 11.2 fl. oz. bottle marked 2013/05/09. I am drinking it on December 23, 2014 more than 18 months after it was bottled.

Beautiful slightly murky brown pour with ruby red highlights and a modest tan head.

The aroma has toasted Belgian malts, yeast, and cherry notes. No booze at all for 11%.

The body is medium to full.

Those the toasted malts arrive in the taste punctuated by a vibrant but tart cherry flavor. Mellow on the palate. Lingers dryly at the finish but like a wine sort of dry. Easy to drink. I would have more of these. (549 characters)

On-tap at the Porter Beer Bar in Atlanta.

Pours a hazy and dark amber-brown color with a one-finger slightly off-white head. The head recedes into a thin cap on top leaving solid lacing.

Smells of sweet malts with hints of biscuit malt aromas. Also present are large amounts of dark fruits - plums and raisins mostly - with slight amounts of pears.

Tastes very similar to how it smells. Sweet dark malt flavors kick things off and are joined quickly by sugar-coated dark fruits. Raisins are predominant with hints of dried plums and figs. Midway through the sip the fruit flavors lighten up a bit and then carry through to a crisp ending.

Mouthfeel is very good. It's got a very nice thickness with fine carbonation.

Drinkability is good. I finished my glass quickly and could have another without a problem.

Overall I was a fan of this beer however it wasn't quite as complex as I would have liked given the big ABV. Still, a nice sipper that's worth a shot in the colder months. (986 characters)

A: Poured from a bottle to a goblet. Had a dark brown color and a cloudy consistency. There was a small amount of foamy head that quickly dissipated. Not a whole lot of lacing.

S: A big aroma of dark fruit, chocolate, and malt.

T: Tasted of chocolate (just enough), some malt, a bit of yeast, and dark fruit (raisins, plums, etc.). Boozy, but in a good way. A powerful, complex, well done flavor.

M: A good amount of carbonation with a somewhat harsh finish. Medium-bodied.

O: This is definitely not a beer wimps. It's big, strong and forceful. It's also well made and totally drinkable. (591 characters)

Bottled 7/14/2010. Poured into my St. Feuillien goblet, Cuvée Du Chateau is dark brown with a small tan head leaving light, foamy lace.

Smell is big esters, loads of grape, strawberry, bubblegum. Clean, spicy alcohol.

Taste is absolutely amazing. Wow. What a killer quad. Such a clan, pure fruitness, nice little spiciness and clean phenols to cut it, super smooth.

Mouthfeel is slippery and light, the epitome of digestible.

Drinkability is dangerously high. This is a fantastic beer. Absolutely world class; it may have equals, but is unsurpassable. (560 characters)

Had on tap at Track 84 on 5.4.2010. Served in a tulip. Poured an opaque mahogany with burgundy highlights when backlit. A half inch, creamy, off-white head quickly receded into a thin consistent skim - no lacing present during the tasting. Nose was very subdued - some malt and a slightly vinous quality. Taste follows nose - dark fruit dominates, but not particularly malty, sweet or complex. Flavor profile is lacking the big malty, sugary quality I've come to associate with the style. Mouthfeel is medium-light with a subtle carbonation - somewhat thin for the style, with a slightly dry finish. I have to say that I was a little disappointed. Not really style consistent; closer to a Belgian Strong Dark in my opinion. Alcohol was well-hidden, but I was a bit disappointed by this beer. (791 characters)

Pours a dark reddish tinted brown color with khaki colored head that dicipates quickly. Scent is bold, yet refined... rasisin, burnt carmel, rum, slightly oxidized wine and some prune and fig. While the whiffs hinted at strength, the taste brings all the components of scent together in an ultra smooth beverage, not one flavor overpowers the other. Medium bodied, smooth, good moderate carbonation. A nice, in control and sophisticated BSDA. (442 characters)

Pours a deep amber to black in color with a small light tan head. In the aroma, dark fruit, figs and raisins, and a small alcohol note. In the taste, dark fruit, raisin stands out and a caramel like sweetness and a pinch of alcohol. A small alcohol bite and medium bodied mouthfeel, with a dry dark fruit like aftertaste. Kind of somewhere between a barleywine and the Donker, nice nonetheless. (394 characters)

Pours an opaque deep brown with a solid quarter inch tan head that dissipates into a ring of foam.

Aromas of dark fruit, cherry, plum, and belgian yeast are supported by a slightly sweet, dark malt backbone.

Flavor is fairly cherry/vinous dominant, with belgian yeast and lightly toasted malt carrying into a somewhat peppery finish. Notes of chocolate, caramel, and alcohol add complexity. Candy sugar sweetness emerges as it warms.

Body is fairly thick with moderately high carbonation and a light finish. Significant alcohol warmth is present.

Overall, a nice quad that hides the alcohol flavor fairly well. Not as complex as I had figured but the vinous character is interesting and helps the body not seem so heavy. (724 characters)

A: This poured a very dark mahogany with moderate tan head.
S: It smelled like grassy hops and sulfur, with underlying rich caramel and brown sugar and raisin, and lots of sour Belgian yeast.
T: It tasted like earthy caramel and rich brown sugar and powdered sugar and raisin, with sour Belgian yeast and a bit of floral hops and sulfur. It had a very mellow sweet and sour aftertaste.
M: It was slick and oily with moderate smooth natural carbonation.
D: This had great delicate complexity leading to delicious taste. It had great body too, and hid the alcohol amazingly well, so it was super easy to drink. But it was also good enough to sip and savor. However, there was a very unpleasant sulfur element to the scent (dominant) and taste (subtle). I'm not sure what's causing that, or if age would help that or make it worse. That's the only thing keeping this from being a top BSDA. (886 characters)

appears a murky chesnutt brown. thin off-white head. lacing clings to the glass. mild aroma of Belgian yeast and complex maltiness. earthy notes and a touch of alcohol, very nice. taste is complex, yet so easy to drink, flavors are melded together. herbal. good balance of dry and sweetness. medium body. soft subtle carbonation. extremely smooth to drink.

The beer has big notes of fruit bread, dark cherries, plums, and dates in the front. There's then a caramel and sweet over ripen banana. There are hints of alcohol and lots of winter spice.

The flavor on the finish is a bit lacking with a lighter medium mouthfeel. (266 characters)

Pomegranate-brown with creamy parchment head.
Fruit cake, glace cherry, cherry and straight booze on the nose – big and sweet.
Toffee cake, dried cherry, some yellow apple, a clove hit, and a spicy end with a sarsaparilla comeback.
Dark candy sugar end and sweet linger.
Med, well chewy, round.

Doesn’t throw like 11% at all. Deep, faceted, BSDA. Sweetness kept in check by spice. A blue cheese beer. (408 characters)

Bottle at Stubbies in Gainesville. Pours very dark with slight head. Heavy alcohol smell mixed in with plums and raisins. Maybe some pear. Definitely lets you know it is 11%, but this does not overpower the complex prune-chocolate combo that bursts on the palate. Nice sweetness, molasses, candy sugar. Felt it going to my head after just one. A must try for Quad fans. This one should be talked about more. (407 characters)

Poured into an ornate Kasteel goblet. 2010 vintage.

3.5 A: Pours a dark brown color. I couldn't get much of a head going on this. Managed maybe half a finger, which fell pretty rapidly. I was a little lenient given the high ABV, but this could have been better.

3.5 S: Mainly dark fruits in this one. Plum, prune, purple grape, raisin, and date. There's some crystal in there as well. The nose is pleasant through and through, but needs more strength.

2.0 T: I'm somewhat shocked at how boozy and raisiny the taste is. This seems a bit unrefined in that regard. Anyway, this has a plentiful bready yeastiness. Prune, fig, and date are back in the taste. Lots of crystal malts. A little sweeter than I like, but acceptable.

3.5 M: Lighter medium body. Good spritzy carbonation. This is the best part about the brew, but this isn't even that great.

2.5 D: This isn't a terrible beer, but it is a bad one and it's definitely too pricey given the quality. Anyway, I can't say I recommend it unless you like booze and raisins a lot. (1,033 characters)

Nice hefty dark Belgian ale with a pleasing aged sense.

Presentation: 750 ml brown foiled and corked bottle. Sober and slightly old fashion label in dark and old colors with the name of the brew and branding. emblem Back offers notes with serving suggestions, bottling date (100527, whereas the cork says 04/2010) 11% Alc. by Vol. Served in a snifter.

A - Amber brown to brown pour, fair frothy head, medium to low retention, fair surface memory and some touches of lacing.

S - Sweet nose full of caramel and dark fruits.

T - Taste follows with a nice coherence: sweet, malty, plenty of fruity touches of figs, prunes… Some black cherry. Nice compact range.

M - Medium/full body with medium to low carbonation, and a softy smooth touch.

O - Nice sweet sipper, quite compact.

Notes: A nice take in what I remember as the dark Belgian Cuvée range. While nothing mind blowing this tops the decent Scaldis version, and sure enough is miles away from the Leffe offering. Not something to actively look for but a brew that I would have gladly again. (1,053 characters)

On tap at Ebenezer's on 2/27/10. This was aged in oak barrels for 10 years!

A - The liquid possesses a deep red wine character reminiscent of a bordeaux with a sparse off-white head that reduced into a patchy, wispy veil and deposited subtle web-like lacing around the glass.

S - Subtle tart and slightly sweet cherry character with a hint of oak wood. Overall, the nose is much more tame and subdued than I was expecting (althought definitely not in a bad way). I was anticipating a much more tart cherry character with more of a pronounced wood character, especially since this was sitting on oak for ten years! There is a hint of cherry cough syrup in the background.

T - Flavor is balanced nicely with a subtle oak character. While the cherries don't impart a huge tartness, they actually blend rather artfully with the oak to provide a hint of sweetness in the midst of dry, woody and sour notes. The cherry character is definitely more prevalent in the flavor than the aroma, however.

M - Medium bodied with subtle carbonation and a syrpy texture. Finish is slightly dry with a mild sourness on the palate.

D - This provided me with a wonderful sipping experience while enjoying my visit to Ebenezer's. This wasn't as crazy and in-your-face as I was expecting. Instead, I was treated to a rare and delicious blend of cherries and oak. (1,345 characters)

Nice color. Antiquated dark brown with a churned beige head. Insane lace coat. 5.0

Tart dates and oxidized apple flesh. Rich toffee and light golden raisin. Muscled yeast with desserty bread aromas. Medium booze level is a constant. 4.0

Apple cider, dates, raisin, toffee, alcohol, bread pudding, big booze, and a rum finish. Yeast is almost overactive in the taste. Moderately hot. 4.0

Slick and sticky with very light carbonation. Much booze, after it's all said and done. 3.5

Nice quad. Very smooth. Colorful flavor. Enjoyed this vintage immensely. 4.0 (575 characters)

Got this one at the liquor store down the road.

From a 750 into a snifter. Cool looking bottle that I will try to get a photo up of.

Note: This is their quadrupel, or donker, brewed to be like it's ten years old. Read: This beer is NOT 10 years old. It is a recent brew, but the brewer artificially aged it to be like it was ten years old.

APPEARANCE: Pours a one finger, medium looking an head with very good retention. Dark bistre brown in color with medium carbonation evident. head slowly fades to a good foam cap. A good carp remains until the end and leaves lots of nice lacing down the glass.

SMELL: Caramel malt, dark malt, and lots of dark fruits. Raisins and dates come through in the aroma. Some spicy notes, cloves and coriander, as well as some brown sugar.

TASTE: Definitely could've fooled me. Tastes exactly what I would expect a ten year old briun to taste like. Caramel malt with lots of dark fruits; raisins, dates, and dark grapes perhaps. Lots of spicy, yeasty notes or coriander, cloves, pepper, and some spicy alcohol there as well. Big, sweet and spicy aftertaste is bold but quick. Flavors are very smooth and blend together extremely well.

PALATE: Very soft. Medium body and carbonation, and very smooth and soft on the palate. Light on the palate, goes down smooth and finishes slightly dry. Definitely feels like it's been aged in a cellar somewhere.

OVERALL: What the hell? This was a brewing experiment gone right. I would absolutely love to find an actual 10 year old bottle to compare to the magic con-artist that is the Cuvee du Chateau. I quite enjoy their regular bruin, but this freak of a brewing fast-one really got the best of me. I've had a few aged Belgian brews, and this one tastes and feels exactly like what I would expect from an aged Kasteel Bruin. Liked it so much I went back a grabbed a few more. Wonder if other breweries would be willing to try this with some of their age-friendly beers? A unique and enjoyable drinking experience. One to check out if you get the chance. (2,038 characters)

Bottled May 27, 2010, two days shy of one year ago.

The pour (into a big Gulden Draak tulip) produces a robust head of tan foam, sitting on top of the blackest brown, or brownest black, I've ever seen. Lots of lace left behind as the head slowly diminishes (a head that never totally goes away).

Aroma is a welcoming mixture of dark fruit; chocolate cake/cookies; intensely herbal, um, herbs; alcohol; mineral. Alcohol is quite prominent, which isn't a surprise considering its age and ABV, but it has yet to resemble gas fumes or anything.

Taste isn't any deviation from what the aroma says it will be. The alcohol acts as a bed for the other flavors to do their thing upon. Prominent dark fruits are grape and juicy plum. Chocolate cake comes in just underneath, and there's a hard-to-define spiciness that complements the alcohol warmth nicely. Fairly sweet, but deftly balanced with everything else. Slick and airy in the mouth, it's a more subtle texture for an otherwise up-front beer; not lacking in any way, texturally, although not a heavier-than-hell monster or anything.

A big Belgian bruiser, to be sure, but as long as it's sipped slowly, this well-balanced beer is just as much beauty as beast. But I'm glad I opened it when I did, as I wonder if the alcohol would overwhelm given another year or two...? (1,322 characters)

Draft at Ebenezer's. Apparently this is also called by the less appealing name "Donker."

Pours medium-dark brown and somewhat opaque with a nicely formed off-white head.

The aroma is nice with caramel, brown sugar, Belgian yeast, and dark fruits.

The flavor is somewhat fruity with plum and raisin notes, nuts, sweet caramel malt, mild roast, and Belgian yeast.

Medium-full bodied with average carbonation.

Not boozy at all - the 11% ABV really hides itself, making this a dangerous beer. (493 characters)
