Poured into a chilled La Trappe goblet.

Appearance 3.75: Poured out a dark, deep brown. Really more of a black with brown highlights. Absolutely NO HEAD whatsoever. Zip. Nada. No lacing, either.

Smell 4.0: Great nose on this brew. Deep gravity of the scent as well: almost burnt caramel mixed with noble hops and a light smokiness. Lovely.

Taste 4.50: Front is slightly sweet and all in the front of the mouth. The Middle is HUGE: big wave of malty, sugary goodness and a nice taste of grains, noble hops and many other elements as well: raisins, dried figs...amazing. How can the Finish compete with this???? Well, it does and what you receive is a lovely taste of...how shall I describe it? Compressed, concentrated essence of Belgian beer. It's this amazing blend of yeast, malt, light hops, phenols...hard to describe. Very hard to describe, but -nonetheless-- delicious. Reminiscent of another fabulous beer from the Kasteelbier group: Brigand. Aftertaste is long and deals with the amazing fallout from all the above. Malt, madness and Belgian infighting.

Mouthfeel 4.0: You know, originally I rated this a bit lower, but after sitting with this beer and learning to appreciate it, I believe that the low carbonation is actually a blessing rather than a hindrance.

Overall 4.25: What can I say? This is a challenging, complex beer. If you are looking for something to go with your "roasted wild boar shank with sherry reduction and Shiitake mushroom risotto" LOOK ELSEWHERE. This beer is all about sipping, enjoying and focusing on the beer. The brew, the amazing tastes that come from barley malt, hops and water, that's what this baby is all about. This beer will make you want to understand what is going on with it. To hold its "hand" and comprehend it. What does it want? What do we all want? Wow. Highly recommended. Did I mention the 11% ABV? Can't detect it. In the taste, anyway. ;)

While I enjoyed Kasteel's Donker, the Cuvee du Chateau is a near-total miss, the ethanol being far, far too prominent in taste and feel (even with three years of age in the bottle). What's strange is that I enjoyed a bottle of this in Belgium and found it much more mellow and sweeter with less obvious ethanol, closer to the brewery's Donker in overall flavor profile - I'm unable to remember what vintage that Cuvee was, though. I don't think I'd go out of my way to purchase a bottle of this again, perhaps I might to see if age contributed the ethanol bomb that this was.

Pours a 1.5cm tall head of off-white colored foam, made up of small and medium-sized bubbles that yield a frothy-looking appearance. Foam retention is average, around one minute, fading to a thin ring around the glass. Lacing is modest, a few larger lines and patterns clinging to the sides of the glass. Beer's body is a dark brown to black color, with light bringing out orange hues around the perimeter of the beer. Carbonation not visible through the opaque body.

Aroma of raisin, prune, caramel-like sweetness, slight grape ester, and mildly notable ethanol. Not particularly memorable, fairly standard for the style.

This bottle was very ethanol heavy. Overall flavor of ethanol with undertones of dark caramel-like sweetness, prunes, cola, and hints of rum. Front of palate picks up ethanol, anise, and dark caramel malt sweetness. Mid-palate of prominent ethanol that obscures what is a notable caramel malt base with burnt sugar, a touch of roasted barley, anise, and prunes. Back of palate detects ethanol, with anise, prunes, and dark caramel-like sweetness in the background. Aftertaste of ethanol, caramel-like sweetness, and a touch of anise.

Beer is medium-heavy to heavy in body, with carbonation of medium-low intensity, resulting in a foamy (1/2) and smooth (1/2) mouthfeel that's a bit underwhelming for the beer; for the style it's in an acceptable place. Ethanol is readily felt on the palate and back of throat as fairly obvious burning, and in the nostrils as a notable warming sensation: not subtle or pleasant. Closes dry, with heavy stickiness remaining on the palate and lips.

330ml bottle, poured into Kasteel chalice.

A: Very dark in colour, opaque, tiny disappearing tanned head, some lacing.

S: Tawny port like, plum, booze and fruity esters.

T: More bitter than the "Kasteel Donker" mellowed throughout, hints of plum, brown sugar, fudge. Finish dominated by boozy burn.

M: Smooth, moderate carbonation, medium to thick body.

O: I would say, aside from the bitterness, it was barely distinguishable from the "Donker". If it qualifies as a Quadrupel, it doesn’t quite hit the heights others do.

11.2oz Belgian style bottle.
2010 Vintage

A - A hard pour reveals a ruddy dark brown colored body with little to no head. A jumbo bubbled collar forms with small whisps of islands in the middle.

S - Soured red figs, tart and sugary, cold sticky dates, Belgian candy syrup, brown sugar, sugary caramel, dirty cardboard sweetness. A tartness keeps coming up and envelops the fruity aroma mid drink, but the deep malt base overtakes everything in the end.

T - Spicy caramel malts, dark bread fresh out of the oven, brown sugar, molasses, not as much fruit as the nose describes, somewhat fruity though, figs are the dominate fruit along side raisins, and dates. Oxidation is present in the form of dry caramel. There's grape and raisin flavor that melds together very well. Old and deep sugary malts. Strong spicy components really kick in middle to end, creating a dry finish to to a sugary malted base.

M - Thick and viscous feel, (like a thickened prune juice), low carbonation with a small and tight stingy feel on the tongue.

Very dense and caramelized flavors with a thick and sugary body. This drinks very elegant. The finish really shines due to the swift and spicy dryness. I haven't had this fresh but this is drinking excellent for the year. Lots of spicy malt laced with sugary fruit. I picture myself drinking this in a tux with a cuban cigar after dinner. Really glad I cracked this. I just wish I had another one to hold onto for a few more years.

A: Poured a dark hazy brown. Good carbonation but held no head. A flare up of fizz bubbled up after pouring it into a tulip, reminiscent of a soda.

S: Rich and leathery. There's a distinct sweetness of red raspberry syrup. Hints of wet oak.

T: A thick rich maltiness starts first with dark roasted walnut and charred (not burnt) wood. Raisin and black cherry. Tangy bitter sourness overpowers from the back of the palette rushing forward. The bitterness is a little acidic like a balsamic. In my opinion, I would have liked it slightly less bitter and less oaky to let the other sweet and sour fruitiness shine forward. A final sweetness finishes the flavor profile. Fortunately the acidity softened a little as it rested in the glass, much like a nice wine.

M: Medium consistency. Fairly dry finish at the back of the tongue.

O: This one didn't completely work for me. It was just too vinegary. I found that sour alkaline finish acrid. It did soften up a bit as it sat and I liked many of the other qualities of the flavor profile like the thick prune notes, but I won't be rushing back to cuvée du chateau.
