Complex beer - deep brown, small head. Some floaters in the last pour.
Fruity smell - little sweet, tinge of sourness.
Complex flavor, not that hoppy (not surprising as it is a aged beer). Relatively balanced - bitterness, some sweetness, bit of a battle between whiskey and wine - barrel aging is very present but not overbearing either. Slight acidic/ sourness.
A unique beer, enjoyable. Enjoyed as it developed/ warmed through out the evening.
From the bottle (picked up at Final Gravity in Roseville):
Onxy is a second generation fermentation in Pinot Noir barrels subsequently filled with spirits. The whiskey was then drained and the barrels were refilled with uor black double IPA.
Nearly twice the alchol and bitterness. Ours clocks in at nearly 9% and over 90 IBU's
Notes of sherry, chocolate, roast barley and toasted oak. As one would expect, a hint of smooth rye whiskey on the lingering palate. Refremented in the bottle....
