A - Poured into the proper Chimay chalicet, this beer presented a cloudy orange with a thick / foamy off-white head that stays start to finish. Unsettled yeast accentuates the bottom 1/8th of the glass. Very handsome.
S - Subtle apple, pear, and floral notes.
T - Crisp and refreshing with a dry finish. ABV content provides a nice warming effect after just a few sips.
M - Silky smooth with just the right amount of carbonation.
O - An excellent beer. There is nothing flashy about this brew at all. It's an in your face, "I am what I am" beer that hold its own without being dependent on gimmicks. Just goes to show that a commitment to quality ingredients and time tested methods will produce results time after time. I can see this as a great winter ale, but maybe that's because it's Christmas and I'm just "in the spirit".

Pours a fairly clear golden with a lingering frothy ivory head. Notes of green apple, lots of peach, coriander, and clove dominate. The flavor is more subtle, with sharp green apple,a touch of pear, and citrus becoming bready mid palate and finishing peppery and spicy. Great beer, with a well appointed dry character that keeps it refreshing. Bitterness is a touch more than I'd prefer.
