Chilled 33cl bottle pored into a Chimay chalice glass.
Generates a creamy and fluffy 2 finger head that leaves behind a reasonable degree of lacing. The body of the beer is a solid fusion of hazy rust or deep amber honey moving out towards maple syrup.
Nose over the glass, deep inhalation... not much. Once again with slow drags of inhalation still not much other than a mild pepper like aroma. It should be noted these notes are from a winter evening and a chilled beer. My experience with Chimay is that the aroma has an almost linear relationship with the temp of the beer so perhaps warming it up may release more aroma.
Taste... now thats a different story. Malt drives the base of the Chimay white and carries a grainy nut flavor with a spicy twang. This however slowly degrades and lets a citrus flavor move forward albeit quite short lived as a sticky dry ester finish hovers about.
In many aspects this is a straight forward beer. It is still complex in flavor when compared to a euro pilsner for example or more to the point a Belgian Tripel, however it isn't simple. Lets say its straight up the business and a damn good Tripel.

Hazy amber orange color with a huge thick head with great retention and leaving lots of laces.
Fruity aroma with notes of grapes, peaches, Belgian yeast, mango, candi sugar and banana.
Flavor of young wine, white pepper, coriander, apple juice, pear, herbal hops, core of pineapple, bread, almonds and lemon. Dry and mildly bitter aftertaste.
Light to medium body with effervescent carbonation. Alcohol of 8% abv is completely well hidden.
Very elegant fruity Tripel with a subtle tartness and superbly well balanced. Complexity comes slowly in small pieces. Huge drinkability for its high abv. Very easy to drink for new lovers and still interesting for experienced.
