Drank from a Chimay chalice, it pours very cloudy/filthy dirty looking dark orange-brown color with a 1 finger foamy tan head that was full of tiny bubbles and faded on the quicker side, leaving minimal foamy lacing.

Smells spicy up front with some fruit like apple skin and pear, toasted grains, slightly funky yeast and then the spices again including pepper, cinnamon and some mint and/or tea leaf. Some honey and musty grapes creep through at the end, this does not have the classic strong Belgian funk I expected.

Taste is sweet and fruity, like candied sugar and fruit candy like a sour patch kid mixes with toffee, wheat bread, yeast, toasted grains, tart green apple or grapes, floral hops, pepper, coriander and dry leafy citrus hops. Very well balanced with only a mild funk in the aftertaste, it was easy to drink and almost completely hid the 8% ABV.

Mouthfeel is creamy smooth, with very mild carbonation, a medium to chewy body and a finish on the dry side that is clean and sweet at the same time with a bready aftertaste. This bottle was aged at least 2 years and so perhaps it was not as fresh as it should be enjoyed, so my assessment is a slight disappointment as I recall this being better the last few times I drank it. Will try it again for sure with a newer bottle and give this classic it’s due which may drive up the overall score.

Pours a nice hazy orangy colour.
Aromas of malts, mild hops, lemon, fresh cake.
Tastes of mild hops, malt, lemon, black tea and a hint of bubble gum.
Smooth mouth feel. Champagne like carbonation.
I always drink the red, but this is a step above!

Look: Bright golden honey in color. Moderate cloudiness suggests a bigger body, but the white head, while tall, is light and soapy.

Smell: Sugary caramel is sharpened by orange marmalade and a sprinkling of cloves. Some tropical fruit and even a bit of bubblegum ups the sweetness ante as the drinking commences, but remains bridled by an undercurrent of basics: bready malt, and earthy hops. It is a well balanced, yet multilayered concoction, which smells artistically delicious.

Taste: Toffee melanoidins are soft, yet immediate, and are joined by toasted nuts sprinkled with brown sugar, and a whisper of milk chocolate. A bit of bubblegum and banana bread pay homage to the Hefeweizen, but a mild bitterness from a rustic, yet refined mixture of noble hops keeps the taste true to the Tripel style, as does the taste of ripe oranges and apricots. The overall sweetness is further tempered by grainy malt, which does an excellent job blending the beer's potentially discordant elements.

Mouthfeel: Smooth, yet a bit viscous, with moderate carbonation helping to create a delicately dry finish. The alcohol warming is but a whisper, which seems appropriate for the beer's sweet and bright flavor profile.

Overall: Perhaps more of a masterpiece than its stronger sisters in that its balance couldn't be better and that its full flavor is neither dried out by hops and/or carbonation, nor drowned out by alcohol. This beer is soft, sweet, spicy, and hearty, and because no one element outshines the rest, its many qualities can be easily appreciated.

Pour in tulip at Bo-Beau, La Mesa. So after 1500 reviews it may be best to simply say that compared to other Tripels, this one is a bit muted, more subtle, more easy drinking. Each of the expected profiles that we see from the likes of Westmalle or St. Bernardus are indeed present, just in a less intense manner. Could be a nice "intro" Tripel.
