A - hazy gold straw, pillow fluffy three finger head.

S - lemons, spice, Belgian yeast.

T - moderate weight taste, light zesty, Belgian yeast, lemons.

M - light, bubbly.

O - hmmm, just like a better looking spicier Hoegaarden really, but at four times the price. Tick! Done!

As the label says, this was once reserved only for the monks and guests at the monastery, but can now be easily found along with the 3 other Chimay beers.
Pours very hazy golden, one finger dense white head with great retention
Yeasts take center stage in the aroma, with tons of spices, then some honey, sweet grain, blond fruits and sponge cake.
Taste starts with juicy tutti frutti (apples, pears, oranges, lemon, even some pineapple and papaya), settled on some light bready malts. Spicy yeasts follow quick, with tons of clove, coriander, lemongrass, flowers, faint anise, cardamom, peppercorn, dry citrus peel, touch of sage. There's also some dirty green hay funk, straw, faint barnyard. Finish is a bit dry, a bit bitter, and the spices just keep going on.
Medium body and carbonation, somewhat crisp and springtimey, this is incredibly refreshing.
The big bag of spices might scare people unaccustomed with Belgian brews, this one being an extreme at that, but i personally found it very tasty. Incredible yeasts.

Pours gold with a large fading head.
Nose shows Belgian phenols, grassy hops and a very soft but off-putting decomposing plant matter/muddy note.
Flavours concentrate one the phenols, grassy and spicy hops and light sweet malt. Finishes very dry however.
Carbonation seems a bit over the top.

330ml Chimay classic bottle. Goblet. Pale gold color, chill haze appearance. White, close & lasting on top head. Herbal & yeasty aromas, hints of fresh bread, biscuit & Granny Smith apples. Malty, spicy & spiced upfront. Medium to light body. Moderate but lively carbonation. Dense texture & funny palate. Increasing herbal bitterness & slight tartar touch in the middle provides a refreshing sensation. Subtle quince astringency. Extended bitter finish. Green wood & fruity hues -apple like- on the aftertaste. Nice session beer. Probably, best Belgish Ale below 5% I´ve ever had!!

Review #300, and this is indeed a special honour reserved for a special beer - Chimay Doree, also known as Chimay Gold, the "patersbier" or "fathers' beer" that is only available within the monastery and consumed by the monks themselves. The fact that I may never try this fine ale again, baring a bucket list tour of the 8 Trappist brewers in Belgium, makes this quite the solemn occasion for me.

Poured from a 330ml bottle into a Chimay chalice.

A: Doree presents with a most pleasing (for bottle-conditioned beer lovers) cloudy mango body and a resolutely firm 1cm white head. When viewed with light from a white LED light from above it takes on an ethereal character like some sort of beer from God *Angels singing "Ahhh"*.

S: A very yeast driven aroma. Upfront with freshly baked bread and notes of clove and honey. You know this recipe is based off the Rouge but with slight changes in ingredients, as such you just catch a whiff of ethyl acetate in the aroma. The whole fragrance is classic Belgian monastic ale in a glass.

T: Light and fruity, easy drinking, a bit too easy drinking. The palate consists of bread, clove, honey, coriander and papaya. The finish is dry with a slight herbal bitterness. Again it is important to note that the flavouring overall is weak and surprisingly not as expected from a Trappist brew (even a lowly full-strength one).

M: An unexpected medium body with a creamy carbonation given the restraint of the taste.

D: I found this brew to be slightly too weak in the flavour department, yes I know that's the point but after revelling so much in its brethren I guess I was a bit "meh-ified" overall by this beer. I can however see how keeping the ABV low might be beneficial to the monastic orders in their patersbier as they do have to live/work/pray etc... and getting drunk at dinner every night only to wake up at 5am would be a hard slog. I believe more people should give this a go given the chance, just don't expect it to be as tasty as the Blue or Rouge.

Food match: I imagine this would match well with the Chimay cheeses, Kippenwaterzooi (a type of creamy Belgian stew) and fresh baked bread.
