330ml on-tap at Il Santo Bevitore pub in Venice (€6.00):
A nice enough beer & one I enjoyed drinking but I'd built it up too much in my own mind as it didn't quite live up to my expectation & I couldn't honestly say it was anywhere near as good at Chimay Blue, or even Chimay Red or Tripel. It was fresh & lively with a few nice flavours appearing but the nose seemed a little light & the flavours definitely weren't as complex as I've come to expect from Chimay over the years. It's one that I'm glad I was able to try but I imagine it will likely be a one-off for me & I'll most likely stick to Chimay Blue in future.

330 ml bottle into signature chalice, bottled on 8/18/2015. Pours lightly hazy bright golden yellow color with a 1-2 finger dense white head with good retention, that reduces to a nice cap that lasts. Nice dense soapy lacing clings around the glass, with a large amount of streaming carbonation retaining the head. Aromas of lemon zest, orange peel, peach, pear, apple, coriander, clove, peppercorn, wheat, cracker, light honey, herbal, grass, and yeast earthiness. Damn nice aromas with good balance and complexity of bright fruity/earthy yeast, spices, and pale malt notes; with good strength. Taste of big lemon zest, orange peel, peach, pear, apple, coriander, clove, peppercorn, wheat, cracker, light honey, herbal, grass, and yeast earthiness. Light herbal/yeast spiciness on the finish; with lingering notes of lemon/orange peel, coriander, peach, pear, apple, clove, peppercorn, wheat, cracker, and herbal/yeast earthiness on the finish for a good bit. Damn nice robustness and complexity of bright fruity/earthy yeast, spices, and pale malt flavors; with a great malt/yeast/spiciness balance and zero cloying flavors after the finish. Medium-high carbonation and light-medium bodied; with a very smooth, fairly crisp, and slightly creamy/bready mouthfeel that is nice. Not too dry after the finish. Alcohol is very well hidden with zero warming present after the finish as expected of 4.8%. Overall this is an excellent Belgian pale ale. All around great robustness, complexity, and balance of bright fruity/earthy yeast, spices, and pale malt flavors; and very smooth and crisp to drink. A very enjoyable offering.

I happen to really like this one. Here goes:

A: Slightly hazy but clear yellow. Pours a nice head that leaves good lacing. Plenty of effervescence, which is typical of the style.

S: Whoa, unlike any beer I've ever smelled in my life. If I could compare it to anything else in the world, I would say that it smells like suntan lotion. Banana cream with hints of lemon and hay. Very, very interesting.

T: Good. Lemon and wheat are very prominent, and these are followed by more grassy and hay-like flavors. Very good malt profile. The bready yeast also makes itself known, imparting lots of lighter spices and pepper. Very good and complex

F: Thick and bready, but not overly so.

O: very well-made beer.

I did not like this beer at all. This "pale ale" tasted more like a lager with a bit of everything from the spice rack throw into it. The absurd amount of spices I got off this beer was very offputting with no hops to be found anywhere. Do NOT recommend this brew, worst of the Chimay line-up in my opinion.

330 ml. bottle poured into a wine glass. A rare find here stateside until nowadays anyway. Pours a pale golden with a thick and foamy bottle conditioned cap of whitish foam. Touch of noble hops along with soe Belgiany yeast esters on the nose seem nicely balanced, and leaning toward more hop presence with warming.

Taste follows with a spicy hop finish and a subbtle pale malt character throughout. Offers notable pils attributes initially and until the yeast aromas become more dominant as the beer warms. Then you get more of a fruity and even Brett character yet sans any funky character. Clean in that regard, nicely carbonated to give feel to a light weight offering. More balanced Belgian aroma with more warming and drinks more like a witbier at that point. Smooth and easy.

Look: Lovely pillow head of white, distinctive lacing. Cloudy golden ale.

Smell: Best part of this beer. Lemons, spice, florals, hay. Clean and sharp.

Taste: The smell comes through in the taste, but somehow it's more subdued on the tongue than in the nose. Light, fruity, with the aroma's spiced hops.

Feel. Effervescent, delicate, easily dissipated.

Overall: This is a lovely offering from chimay. Not quite on par with their trademark tricolor beers, but a lovely addition.

A: Pours a lightly hazy medium golden yellow in color with moderate to heavy amounts of active visible carbonation rising from the bottom of the glass and faint amber highlights. The beer has a three finger tall sudsy foamy pillowy bright white head that very slowly reduces to a very thick (slightly more than one finger tall) layer covering the entire surface of the beer and a thick ring at the edges of the glass. Moderate to significant amounts of lacing are observed.

S: Moderate aromas of grainy pale malts along with moderate aromas of spicy Belgian yeast and light aromas of citrus/lemon rind.

T: Upfront there is a light to moderate flavor of grainy + pale malts with just a hint of sweetness (light fruit - apple). That is followed by light to moderate flavors of spicy Belgian yeast and just a hint of citrus/lemon rind. Light amounts of bitterness which fades away pretty quickly.

M: Medium bodied with moderate to heavy amounts of lively carbonation.

O: Very easy to drink and much "lighter" than the other Chimay offerings. Alcohol is well hidden and this one is quite enjoyable. Glad that bottles are finally available here in the US.

A - ripe banana yellow, cloudy, clingy lacy clumpy yeast fine bead head. 4

S - lavender cinnamon peppermint candy. Xmas cinnamon and orange rolls. Fresh Danish and a pinch of bubble gum. 4.5

T - muted flavors. Refreshing simple. Light but not crisp. Not flavorful doesn't match smells. Similar to Chimay but not heavy. 3

M - lots of mouthful. Chewy creamy and a touch fizzy.3.75

D - flavors don't match the rest of the experience. Ok table beer. 3

I must admit I'm a little bit jaded. Having reviewed 430+ beers (and counting), it often seems like there is, to quote King Solomon, "nothing new under the sun."

But then I get a beer like this one. I found it in the sale bin at a local liquor store in Oklahoma City, one of the mythical low alcohol session beers that are brewed for the Trappist monks of the monastery! So I had to buy the 4-pack of 330 mL bottles.

I poured the bottle into a Boulevard snifter glass. The result is a bright gold liquid with a big white head. If pour carefully one could get a crystal clear look but I personally prefer to drink the yeast so the final result is a little hazy.

Interesting aroma. It reminds me a little of soap or maybe even Texas bluebonnet blossoms (normally not thought of as having aroma, but up close they smell fresh and clean, almost soap like).

The flavor is even more out there. Lots of citrus - the label says orange peel but I'm getting more lemons and wheatgrass. Very interesting spice profile. Starts off sweet then goes dry and then finishes sweet again.

Fairly high carbonation but not overkill. Crisp and fresh tasting.

Is it as good as the other Chimay offerings?


But is it something unique and worth trying out?


In strength it reminds me of a session beer which makes it a poor value for the cost, but the spices are what take it in a very different territory. The spices don't quite sell me but I have to say I enjoy the fact that they are so different.

So I say, give this one a try! You might like it! If not, then at least consider the fact that you had a beer with a story, one that previously was only available if you visited the monastery in Belgium, in which case $3-4/bottle is a bargain.

A little torn on this one. Love the style, particularly during these dog days of summer, when the last thing I want is some giant tripel or some such to get me all boozed out beneath the beating sun. Generous foamy head, the nose isn't huge but offers some sweetened cereal grains, some musty malt/yeast combo, and maybe just a hint of citrus. Palate has similarities, that same musty note of grain and citrus and some Belgian yeast that occasionally throws off a phenol or two. At times, I was really digging it, at others those musty notes dampened the whole affair. Cool style. I'd give this another shot, I'd say.

A very good new (to me) beer from Chimay. Very light and spicy with some great coriander notes. The flavor packs a heavy orange/coriander punch up front but kind of fades away to light bread towards the finish. A really nice summery beer.

I see pale straw yellow in color with a hazy complexion. There's a quarter inch of eggshell white. I smell pale malt, German aroma hops, and coriander. I taste pure , fresh pale wheat and coriander. The mouth is light, crisp and refreshing.

LOOK: Bright gold nearly peach color with a bubbly, rocky white foam head that protrudes out of the snifter with a careful pour. Just slightly hazy but no sediment.

SMELL: Earthy nose of musty yeast, wheat and coriander. Dry spices really are evident in the nose, as well as farmhouse and a hint of citrus.

TASTE: Exceptionally clean witbier flavor, lemongrass, coriander, grassy hops, peach, lemon meringue creme, wheat bread, and cracker. Light bitterness, and very dry from the spice. Herbal, slightly lemony hop paired to citrus peel and a bready flavor also. Wheat, citrus and spice would be the three most prominent flavors in a complex beer having a rather simple recipe. Chimay just makes great beer.

FEEL: Medium bodied with ample carbonation, super dry for a 4.8% brew. Lingering spice and vague rustic farmhouse flavor really makes it special.

OVERALL: A clean, every day beer from and typically for Chimay Monastery Monks and visitors. Champagne like that and very drinkable, this is a special beer for me personally as it has been a long time want to review it. A class example of the witbier style with a hint of farmhouse.

Used to be there was only one place you can get this, I had it on tap at the Auberge de Poteaupre as an accompianment to my food. As I was driving, it was also the weakest beer on the menu :) Nice blonde style ale served at the inn and in the abbey to the monks.. Tart, tangy and bitter with sticky lacing. Very fine carbonation....different from their heavier beers, but still very good.

Chinay's house-only beer now comes in the bottle! Out of a 330 ml stubby bottle, on to the beer:

A soapy, cracking head sits on top this morning sunshine colored beer. The body shows cloudiness, and frothy retention sticks around. The aroma brings not only a delicate smell, but a delightful one too. With its coriander, orange peel, grass, it smells closer to a well-done witbier.

Doree isdry, crisp, and extremely refreshing. The orange peel is a great addition, plus vague fruits and the soft fruity yeast present makes this beer a gem. It's a light bodied beer that is also soft and creamy.

You can tell that I liked this one a lot. Good call for shipping this to the US, Chimay!

Pours a hazy, pale amber with a very fizzy head. Wonderful aroma with vibrant spicy and herbal notes, as well as some banana and Belgian yeast. Altogether sweet and flowery. The first remarkable thing about this beer that jumps out immediately is its fantastic, soft silky mouthfeel. It coats the palate oh-so-pleasantly. While the flavor is more on the mild side, it does have distinct aspects such as wheat and clove essences, and a malty sweetness that does not overpower. Overall, a very enjoyable beer, especially in the summer.

Look -- Nice, deep golden hue. Good, Belgian foam.

Nose -- Yeasty nose with floral notes that giveaway to a strong bergamot spice.

Taste -- Spices and black pepper. Orange rind and dried apricots on the finish. Always the noticeable clove phenol.

Feel -- Medium body with a very bright mouthfeel. Silky.

Overall -- A different brew for Chimay, for sure. Pleasant, but I'll stick with their other offerings.

Wish I could have appreciated this more. By the time I got it, I was getting some serious beer bloat... this tasted like a spicy Belgian beer, take that as you will. Not sour, not loaded with banana, but a clove and coriander sort of flavor with an interesting array of spices I can't quite recall. Body was moderate with a pleasant carbonation. Good beer, but a mediocre review -- all I can say is that this is a pretty tasty beer. As great as some other Belgians I've had, no, but good nonetheless.

What's this? A new Chimay?! I am gonna be all over that. Poured from the bottle into a Chimay chalice.

Soft topped bone white, slow decant and angled pour gives not much head, but manages to keep it's very soupy puck on top at a simple finger. Very fine head bubbles almost nitrous looking too. Body color appears unfiltered, but has a simple glow of lemon to orange as the tapering gets close to the top. Fine carbonation continues up to the top to keep the head repopulated. Solid looker.

What a great aroma. Full of fruit and wonderful sweetness and spice. Allspice to clove like sweetness, not even dry or hot. Sweet bready notes of honey, maybe a touch of vanilla, oranges and even some mild lemon fruit zesty quality. Has a wonderful angel food cake like smell to it, perhaps a hint of strawberry peaking out of this as well. Great stuff.

Palate though is much more subdued it seems. Lots of mineral and perrier like carbonated water flavors that really cut through. Hints of mild honey and the carbonation gives to some dioxide and pepper rush on the finish. Gaseous palate. Not much depth for this either even for a lighter patersbier/wit/Belgian Pale ale whatever you want to direct the style notes towards. Interestingly the fruit forward aroma and flavor seems to only exist in the aftertaste, in airy gulps and breaths after the swallow.

It's just way too carbonated and without much malt depth unfortunately. Happy to have tried it, but even for a lighter Belgian this isn't giving me that much joy. Perhaps I expected too much, but no big complaints that's for sure.

Pours a cloudy yellow golden color with a huge frothy white head with plenty of carbonation. The odor is spicy, clove, bread like, citrus lemon, orange, coriander, grassy. The taste is very crisp, citrus orange, lemon, spices, clove, grassy, bread like, malty, coriander, cardamom, a little dry in the finish. Slight bitterness throughout.
