Chamay-moi, Chamay me fan. I used to think Blue was it, but red, white, blue all good in their own rights. Much depends on the temperature and condition of the bottle. This red Dubbel is a good one.
Appearance: Pours an opaque mahogany brown color with a tan fluffy head that hangs around and leaves much lacing. (served in a Carton Tulip)
Smell: Caramel malt backbone is decorated with herbacious, cedary, woody, raiseny nose; much must and yeast also, but it all works for me. Old world Church like.
Taste: As it smells, but fuller, rounder, with some spicy clove, berries, and a nice long bitter ride to the finish, then toffee sweetness and fresh cut tart apples. Beautiful finish.
Mouthfeel: Medium creamy, well carbonated, cidery, tingly, and again a beautiful, appetizing finish.
Drinkability: Subtle, contemplative. I like it as well as any other dubbel. In some ways, so far, I may give the edge to white, red, blue in that order, but it's l always love the one I am with.
