Pours a dark amber brown, almost opaque, but with some lighter tan/gold highlights near the edges. Maybe two fingers of off-white, light tan head. Dissipates slowly, but eventually its a very thin cap. Pretty much no lacing.

Very dry, bready smell. Very light caramel sweetness, and very very mild spice and fruit esters. More alcohol as it warms. Very reserved, past the point of subtlety. A little more here would go a long way.

Mouth follows the nose closely, but there is a bit more to it here. Caramel/spices/toasty bread meld nicely, almost gingerbread like. A touch of booze. Very subtle tartness in the fruit as it warms, a hint of apricot. Nice dry finish, sort of a mineral profile. Sweetness is not overdone, hops are barely perceptible. There is some vague bitterness, but it might be the medicinal phenols instead of the hops.

A bit too carbonated for me, but that is apparently characteristic of the style. It's otherwise got just enough body and balance.

Overall this is a beer that matches the Dubbel definition almost word for word, but it's all a little too subtle for me. Nothing stands out too much which is good and bad. It's well balanced, but conservative and traditional. A good beer, but not the best trappist, and definitely not the best of the style.

Edit: After a second tasting it's grown on me a little bit, but I maintain my overall rating. Good, but not great.

This finely, abbey produced Belgian Dubbel will puts some hair on your chest, that is for sure. It pours dark brown, with a large dark tan head that slowly dissipates (slower than usual). It has a strong aroma of caramel and fruit, which goes along with the similar taste. it leaves a sweet after taste, has an edge because of the ingredients alcohol content, and is very filling.

Widely available in the United States...

A - Dark brown colour with loads of head. Very little lacing and head retention is average.

S - Strong sweet chocolate and caramel with roated malt. Touches of vanilla and licorice as well.

T - Definitely a dubbel. Mild phenolic hit. Sweet at first but fading nicely - only the most slight bitter aftertaste. Bit of a burnt caramel/brown sugar feel. This one grows on you slowly as you drink....

M - Basically smooth but with a strong sense of carbonation - fizzes all the way down.

D - As I mentioned above this one seems to improve as you drink (maybe it's the mix of sediment into the beer). Either way I want more.
