Poured into a chimay goblet, i determined that the beer is from april 2011, just over 10 months old.
A: Deep mahogany crimson brown, with a blond creamy head that lasts a very long while and leaves an intricate lacing.
S: Slight sour notes with a munich and vienna style grain bill.
T: First notes are a dark fruit ensemble of cherry, plum, pineapple and mango. Secondary profile of munich malt, pale malt and coriander. Slight notes of caramel and creamy coffee as it warms up. Minimal noble hop bitterness but present more than other trappist beers. Dry citrus and belgian spiced finish.
M: Medium body with low to mid carbonation. Slight maltodextrin style thickness, with a good balance of bitter and sweet. No alcohol feel. Top of the line.
O: This is a pretty solid trappist beer. Not the best ive had (see rochefort 6, 10... and westmalle.) Still crazy good in comparison to other beers. The intense complexity of this beer is what makes it stand out. Must be drank at cellar temperatures, or all beauty is lost on a ruined, numbed palate.
