A: Pours a rustic dark brown. As with all Chimay beers, ridiculously huge and fluffy light brown head. Fades somewhat quickly with only a hint of lacing.

S: Mellow caramel malt. Raisins and bananas. Hint of brown sugar and a little bit of earth.

T: Mild caramel with some toffee up front. Turns into lots of raisin in the middle with some earthy character. Banana and then some spices leading into the finish. Mildly drying in the lingering aftertaste.

M: Medium bodied, feels lighter than it is due to typical chimay high carbonation. Very smooth.

O: Pretty decent dubbel. Malty, mellow...almost to the point of blandness but I find this to be fairly typical of a lot of dubbels. Smooth and very drinkable, however. It gets a pass.

11.2oz bottle poured into my Chimay glass, pours bronze/light brown with a bubbly ivory head, excellent head retention, but no lacing on the glass. Aromas are bready, fruity, Belgian yeast, banana, and woodsy. Delicate flavors and tremendously balanced with notes of bready malt, ripened dark fruits, raisin, currant, faint chocolate, chardonnnay, toffee, earthy hop bitterness, and wood, while finishing dry. Booze is warming, especially towards the end as the ale itself warms up a bit.
Mouth-feel is creamy, silky smooth, lighter bodied, but feels fuller from the perfected carbonation. Overall, one of my absolute favorite beers out there. I love this beer.
