375 mL bottle poured into a snifter. Bottled January 2009.

Appearance - The cage came off without event, but the slightest pressure on the cork causes it to fly off and the beer begins to gush. Fills the glass with white foam. It settles quickly and leaves very little on the surface. The body is clear deep golden.

Smell - Lots of white pepper. Bright orange citrus. Hefty oak. A little bit of pale malt. Light acidity.

Taste - Sour up front, but drops off quickly. Drops off to oak and pepper. The malt lends a hint of sweetness and then becomes orangey. Strong oak lingers in the finish.

Mouthfeel - Very dry. The body drops off quickly. High carbonation.

Overall - Excellent without being all that dynamic. Missing some of the sour and malt characteristics that would allow this to transcend other gueuzes.

De Cam's blend of lambics produces a delicious version of the style with strong notes of sour lemon and apples, vinegar oak, and a balancing mustiness and sweetness. While this is quite good, I'm not sure if it's worth twice the price of a recent vintage 3F. As a treat I might include a bottle in an order once a year.

Pours a voluminous head of 4cm, which has better than average retention of several minutes, gradually fading to a 0.5cm cap atop the body of the beer for the duration of drinking. Foam is made up of small bubbles, giving a frothy, dense appearance. Lacing is present, a few large, thick clumps cling to the sides of the glass, in general quite good for the style. Beer's body is a dark orange color, with light bringing out pale orange-yellow hues. Carbonation is readily visible through the hazy body (40-50% opacity), high in number and activity.

Aroma is of well-balanced sourness and sweetness, with sour lemon and apple cider vinegar, but also mellow oak, light sweetness, and a notable balancing mustiness. Quite delicious.

The flavor of this gueuze is nearing a sharp tartness found in some bottles of 3F Vintage, but never crosses that line. In general, this is of delicious sour lemons and apples, vinegar, oak, and a balancing sweetness and mustiness. Front of palate is awash in sour lemons, apple cider vinegar, tart apples, and mild acetone. Mid-palate of sour lemons, apple cider vinegar, tart apples, mellowing oak, and a backbone of pleasant malt and basement mustiness that refuses to let any harshness through. Back of palate experiences tart lemon and apples, oak barrel, and apple cider vinegar in strong fashion but never harsh, with balancing residual sweetness and a bit of mustiness. Aftertaste is of mild acid as from lemons or vinegar, faint oak, and mild mustiness.

Beer is medium-light to light in body, with carbonation of high intensity, resulting in a mouthfeel that is at first Closes dry and slightly puckering, with light stickiness coating the palate and lips.
