Brewed in 1998, bottled in 2000.
€7 from Beer Planet in Brussels.

Cheese, toes, lemon, saltwater, and oak were all used in the production of this beer, the brewery's first lambic. The cheese was for head retention, which is tall and full of fluff; the seawater and lemon for flavor, which has qualities reminiscent of salt and citrus; the oak for mouthfeel.

The toes? A happy accident.

Large format corn and caged bottle from Tipples. Bottled 2/2012, drank on 2/23/2014. Pours perfectly clear golden orange with no head at all. Nuthin, but I expected that. Aroma of sour vinegar, sweet sugars, a tiny hint of mint. Smells very pleasant. Flavor is sour but not puckeringly so, sweet with some peachy influence, a bit of vinegar, fermented apples maybe, and a bit of spearmint in the back. Completely flat, but I was told to expect this. Honestly I think the flatness takes a bit away from the brew. Slightly dry finish. Mouthfeel is medium, but somewhat heavy for the lambic style that usually comes off extra dry and light to me. I like the flavors but the lack of carbonation isn't my thing. More like drinking a dry white wine than a beer. For $40+ I'd rather have a couple Fou Fones, or one of many other things. Glad I got to try it though, and get my Unblended Lambic tick.

Bottled 2/2012. 750ml 5% ABV. Served in a wine glass

Appearance: Pours a dark sunset orange color. Completely still. Body is lightly hazy with some fine visible sediment.

Smell: Lemon, barnyard, wet hay, green apple, oak, acidic sourness and and slightly herbal.

Taste: Lactic funk, cheesy, lemon, slight grassiness. Overall hugely funky. Sourness is relatively low.

Mouthfeel: Medium bodied, slick mouthfeel, with a dry finish. Flat as a board. Zero carbonation.

Overall: Really good lambic. Hugely funky with lots of character. I can't help but feel like some carbonation would have made it better, even though I understand it's intended to be still. Overall, I'd say it's worth the high price tag.

750ml bottle served in a snifter glass.

Bottled in 2009.

A: Weak pop. Almost flat. Pours a nice orange and slightly cloudy color forming a minimum big bubbled layer that disappears instantaneously. No lacings, no trace of carbonation

S: Smell is really great. Sweet and very fruity. Strong notes of peaches and some light notes of orange. Oak. Pale and caramel malts. Strong notes of Lambic yeasts

T: Slightly sweet upfront. Extremely smooth and pleasant. I was expecting a much more sour taste. Well balanced. Strong notes of peaches. Oak. Light vinegar. A bit citrus. Strong notes of earthy Lambic yeasts in the end. No hops bitterness (as expected)

M: Light body and very low carbonation (maybe due to the 5 years in the bottle). Fruity Lambic aftertaste

O: Great drinkability. Very delicate Lambic. Excellent stuff
