Notes/Commercial Description:
This is the fourth PBW/Belgian Brewer collaboration. Justin Low of Dock Street was the local collaborating brewer. Justin, William Reed (of Standard Tap fame and former professional brewer) and Tom Peters tossed around ideas for this one while enjoying a few bottles Anne-Catherine Dilewyns beers. We wanted to honor what the brewer brews, yet inject a little Philly into the recipe. We decided on adding some Philly honey to a version of her Triple.

$10 for a 335mL bottle, poured into a snifter. Sampled 28NOV14

[A] A slow pour yields a large 3 finger head, perfectly white, very fluffy and extremely long lasting. The body is just short of clear and is yellow with orange highlights. Lacing grabs the glass in sheets but slides off after just a few seconds.

[S] Pilsner malt base. Plain table crackers. Black pepper. Light alcohol. Light fruitiness. A note of plasticky phenols mixes into the background but almost fades away entirely towards the end of the glass.

[T] Pure grain, straw, plain crackers, general spice and orange rind. Very clean yeast flavor for a Tripel. No banana/clove esters, just a general citrus fruitiness. And apple. Perhaps light acetaldehyde. Works kind of well with the flavor profile. The plastic returns late on the palate, especially on the burp.

[M] I love the mouthfeel. Carbonation is fine, bubbly, lightly biting and expansive. While the beer has a sweet midpalate, the finish is dry, adding to the refreshment and drinkability.

[O] Other than the plastic notes, I thought this beer was great. $10 is too high for a repeat purchase, but I'm glad I tried it out.

A: Poured from a bottle to a goblet. Had a yellow color and a cloudy texture. There was a big, foamy, long-lasting head. Very good lacing.

S: A subtle aroma of yeast, fruit, and some malt.

T: Tasted of Belgian yeast (a pretty big shot of it), light fruit, malt, and a hint of some spices as well. Not as aggressive or robust as other tripels, but a solid flavor. Much more underplayed than some other examples of the style.

M: A massive amount of carbonation with a smooth, dry finish. Medium-bodied.

O: This beer is uneven in spots, but is still likeable. It's lively, sweet, and drinkable.
